I am so excited about this perfect party dessert!

Little, bite-size desserts are the best option for any kind of party because people don’t have to carry around a plate and a fork with them. So, when I’m planning my New Year’s Eve party, finger foods and bite-sized desserts are my focus.

When deciding on the bite-size desserts, there are many options to choose from. Personally, I tend to favor cookie balls, cheesecake bites, cake balls, and brownie bites. (You get the theme there, right?) I love covering things in chocolate and I get to do that with every type of a dessert ball.

Chocolate coating adds a little extra layer of flavor to the dessert, whether it’s white chocolate, milk chocolate, or dark chocolate. I like the flavor options of the filling as well. It’s fun to make a whole dessert table out of cookie balls and cheesecake bites. With brownie bites, the fun part for me is to stuff them. You can use caramels to stuff the balls, nuts, chocolate, and as I found out, Nutella!

Oh, before I let you get to the recipe, I just have one quick reminder: remember to chill Nutella first. Pop it in the freezer until it hardens and that will make it much easier to scoop and add to the brownies. It’s pretty much impossible to get room temperature spread to stay inside the brownie bite while making them.

Nutella Stuffed Brownie Bites

Ingredients

  • 1 box brownie mix I use double chocolate brownie mix
  • 1 1/2 cup Nutella spread
  • 10 oz Dark chocolate melts
  • Sprinkles - optional

Instructions

  • Bake brownies per the package instructions and cool to room temperature.
  • Place Nutella spread in a freezer-friendly bowl and put it in the freezer for 30-45 minutes.
  • Prepare a large cutting board covered with parchment paper to place the brownie balls on.
  • Using a cookie scoop, scoop out some brownie and flatten it into a circle with your hand.
  • Scoop out about a teaspoon of cold Nutella and place it in the middle of the brownie. (A small metal melon baller, or something similar, would be good for scooping cold Nutella.)
  • Close the brownie circle around the Nutella and press the brownie ball together. Repeat with the rest of the brownie batter and Nutella. (You can wet your hands slightly with water if needed, to help shape the brownie ball.)
  • Place brownie balls in the freezer for about 30 minutes.
  • Melt dark chocolate melts in the double boiler.
  • Using a fork, drop the brownie ball in the melted chocolate, roll it to cover completely, and take it out with a fork. Gently shake off excess coating by moving the fork up or down and gently tapping the fork on the side of the double boiler.
  • Place chocolate covered brownie ball into the parchment paper and add some sprinkles on top right away, before chocolate hardens. (You may need a toothpick to help slide the chocolate covered ball off the fork and onto the paper.)
  • Repeat with remaining brownie balls.
  • Once all the chocolate is hardened, you can store the brownie bites in the refrigerator, in an air-tight container.

    1. Oh, of course, you can use any brownie mix, Martin. The only thing to watch out for is that the brownies are done all the way and not too gooey 🙂
