These homemade waffles are soft and fluffy on the inside, crunchy on the outside, and flavored with bacon. The savory waffles are made with crumbled bacon right in the batter as well as some onions. It’s a perfect waffle for making sandwiches or serving with fried chicken. Make a delicious breakfast sandwich on these beautiful savory waffles with eggs, bacon, and cheese.
SAVORY WAFFLES
Do you have people in your house who run into the kitchen at the first scent of bacon? Or maybe, you are the one running to the kitchen at the first scent of bacon? I definitely have someone who gets all super excited for some bacon.
As soon as the smell of bacon spreads around the house, he appears in the kitchen as if out of nowhere. All ready for some “Bacon!” There have even been times when I had to hide cooked bacon because I needed to use it for a recipe and he was trying to sneak some. Bacon is just one of those delicious, crispy treats that is very hard to stay away from.
I would definitely get out of bed for a scent of coffee and my husband would definitely get out of bed for a scent of bacon, whether he was fully awake or not. So I came up with a recipe to treat him for Father’s Day that is full of delicious bacon.
If you haven’t tried savoy waffles yet, you are definitely missing out. I’ve been making savory waffles for years and some of our favorites include cheese and chive waffles and now, these bacon and onion waffles.
Cheese and bacon are two of the best things to put into savory waffles. You can use savory waffles as bread for sandwiches. Whether it’s a breakfast sandwich or a lunch sandwich, it’s a nice substitution that’s crispy on the outside, soft on the inside, and full of flavors.
HOW TO MAKE SAVORY WAFFLES
Cook bacon in the oven first until crispy. You can crumble cooked bacon with your hands or dice it with a sharp knife.
Let your cold ingredients like eggs and buttermilk get to room temperature. Take out the eggs and measure out the buttermilk and let it sit on the counter for about 30 minutes.
Whisk all wet ingredients in a large bowl and then add dry ingredients. Make sure all ingredients are evenly mixed together. Fold in crumbled bacon slices and diced onion.
Let waffle batter sit for about 15 minutes, while the waffle maker is preheating. This will give all ingredients a chance to activate and will result is softer, fluffier waffles.
Make sure to read the instructions for your waffle maker for amount of batter to pour at a time and how long to cook the waffles.
To keep cooked waffles warm while making the rest, pre-heated the oven to 200° and keep waffles in the oven, on a baking sheet.
HOW TO MAKE BREAKFAST SANDWICH WITH WAFFLES
Preheat a small pan over medium heat and add a little bit of oil. Slice cheese and set aside. Toast the waffle if it’s frozen or use freshly made waffles.
Whisk eggs with water, salt, and pepper until smooth. (You can use water for fluffier scrambled eggs or substitute whole milk for creamier scrambled eggs.)
Pour whisked egg mixture into the hot pan and cook, stirring and folding constantly, until the eggs are cooked.
Cut the waffle in half and place eggs on one half of the waffle. Top it off with cheese and the other half of the waffle. Add some bacon slices if you wish.

Savory Bacon Waffles
Ingredients
- 2 large eggs
- 1 3/4 cups buttermilk
- 1/2 cup salted butter melted
- 2 1/3 cups flour
- 1/2 tsp salt
- 1 tsp sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 8 crispy bacon strips crumbled
- 1/2 medium yellow onion minced
Instructions
- Cook bacon in the oven until crispy, cool slightly and crumble. Set aside.
- In a small pan, saute onions with some oil and salt until golden. Set aside.
- In a large mixing bowl, combine eggs, buttermilk and melted butter. Whisk well.
- Add dry ingredients to the wet ingredients and whisk until all smooth and evenly incorporated.
- Fold in bacon and onions until evenly incorporated.
- Cook waffles in a waffle maker per your waffle maker's instructions.

My Mom often made savory waffles for Sunday night supper. She served them topped with creamed chipped beef gravy or chicken a la king. They were a nice easy meal for her to fix at the end of a busy day and everyone looked forward to them.
