Refreshing, sweet, frozen margarita, is perfect for any summer celebration. This Mango Pineapple Frozen Margarita is made with fresh mango fruit, pineapple juice, tequila, and a splash of grenadine to make it pretty.

MANGO PINEAPPLE FROZEN MARGARITA

It’s been a fun and busy few days this week. We had family visiting us and that’s why it’s been a little quiet. My husband’s aunt and uncle came to visit the FL family from New Mexico, so I decided to unplug for a few days and just spend time with the family. It’s always so nice to just turn off the computer and not worry about work for a couple of days.

This delicious margarita was actually inspired by my aunt’s visit. She loves margaritas and I planned on making some for us while she was here. I actually planned a few of their favorites originally, until I realized that almost all the food I was planning was Mexican inspired. Hubs and I decided it was a bad idea since they are from New Mexico and they eat so much of it all the time.

I immediately changed my dinner plans to something completely different, I went with Italian and seafood. You can’t visit Florida without gorging on fresh seafood and you can’t visit my house without tasting some Italian food. I know it’s an odd concept because I’m Russian, but I do make darn good Italian food.

I did get a chance to make some Guacamole for my aunt and uncle because I really wanted their opinion on my guac. Them being New Mexico natives is about as close as I can get to comparing my guacamole recipe to the “real deal” they are used to. I was super excited that they loved it and didn’t leave a drop behind. Yay, me!

Well, as I mentioned above, this margarita was inspired by my aunt but I was really sad that she didn’t even get a chance to try it. You see, I over-planned on food and drinks a bit. In my head, three days seemed a little longer than it actually turned out to be. When you factor in all the sightseeing and touristy stuff packed into three days, there is not much time spent at home.

So when they left for the airport, I realized that I didn’t get a chance to make her one of my margaritas. Although, a margarita was still sounding very good so I made one anyway…and I thoroughly enjoyed it! You just can’t beat sitting back and enjoying a nice margarita after cleaning the whole house.

Ingredients

  • 1 large ripe mango, skin and pit removed
  • 3 oz pineapple juice
  • 1/2 oz lime syrup
  • 3 1/2 oz silver tequila
  • 1 Tbsp grenadine
  • About 1 1/2 cups of ice

Instructions

  • Preparation here is completely fitting to the “ease and relaxation” theme of the drink.
  • Just put all your ingredients, except for grenadine, into a blender. Pulse until smooth and divide between two glasses. (Or a nice big glass all for yourself.)
  • Slowly pour grenadine along the inside edge of the glass. Some grenadine will sink and some will float.

  2. do you buy lime syrup or make it, if making how do you make it?

    1. Hi Caroline,

      You can buy it made or make your own. To make your own take take 1 cup of sugar and 1/2 cup water in a small saucepan over medium heat, stirring constantly, 3 minutes or until sugar is dissolved. Remove from heat; stir in 1 tablespoon lime zest 1/2 cup fresh lime juice. Cover and chill 1 hour.
