Stuffed Blueberry French Toast

Who loves French Toast? The better question is who doesn’t? This Blueberry and Cream Stuffed French Toast is one of our favorites!

The first time I ever tried stuffed French toast, was on the very first morning as a wife!! We were staying at a B&B and we got breakfast in bed. It as wonderful! Ever since the, I have been meaning to make some at home. Mission accomplished!!

Ingredients:
4 oz cream cheese
1 tbs milk
1/4 cup of powder sugar
1/4 cup of blueberries
1/2 tsp vanilla extract
4 1 inch slices of Italian bread
2 eggs
1 tbs milk
1/2 tsp vanilla

Directions:
1. Beat the cream cheese, 1 tbs milk, powder sugar, 1/2 tsp vanilla and blueberries with an electric mixer until smooth.

2. Beat the egg, 1 tbs milk and 1/2 tsp vanilla.

3. Cut the bread lengthwise almost all the way (make sure not to cut all the way)

4. Spread a quarter of the cream cheese mixture into the bread.

5. Dip both sides of bread into the egg mixture

6.  Cook for 3-4 minutes of each side.

7. Top off with blueberries and powder sugar.
