CHOCOLATE CHERRY CHEESECAKE

Food blogger’s (and any other foodie’s) mind set is very different when it comes to ingredients and products. We see product and ingredients in a different and unusual way.

Most people, when they see products like mangoes, creamers, ice cream, crackers and just about anything else, don’t automatically think, “what can I make out of this?” or “How can I incorporate it into a recipe in a creative way?” Most people take crackers as a great snack or think of something they can put on top or dip it in.

In our foodie minds, we automatically think of ways to incorporate products into recipes and different creative things you can do with it. Because every product and ingredient has so many possibilities.

That could be why I love the show “Chopped” so much, since the whole point there is to get as creative as possible with ingredients and transform them onto something totally different. Talk about fun!

These little pies in a jar are awesome! I am in love with the flavor combination here. I honestly didn’t expect these flavors to come together this well. I knew that they would be delicious together but they just compliment and work off of each other in a perfect harmony.

It’s a great combination of a crispy, salty and sweet crumble on the bottom that is topped with fresh cherries and smooth chocolate cheesecake. Plus you know just how great chocolate cherry flavor combination is! You have to be sure to get all three in one bite for the perfect flavor pop.

This is no boring pie!

{No Bake} Chocolate Cherry Cheesecake Pie In A Jar

Smooth, creamy chocolate cherry cheesecake made with fresh cherries and crispy, sweet and salty cracker crumb on the bottom.

Ingredients

Cheesecake:

  • 2 8 oz packs of cream cheese softened
  • 2 Tbsp vanilla yogurt
  • 2/3 cup hot fudge topping do not warm
  • 2 Tbsp white granulated sugar

Crust:

  • 1 1/2 cups Original Triscuit Crackers
  • 1 1/2 Tbsp brown sugar
  • 1 tsp pure vanilla extract
  • 3 tbsp unsalted butter melted

Additional ingredients:

  • 3/4 lb fresh pitted cherries
  • 4 oz jars 7-8 jars

Instructions

Cheesecake:

  • Beat cream cheese with an electric mixer, on medium-high for about 2 minutes.
  • Add hot fudge topping, vanilla yogurt and sugar. Beat for a couple of minutes. Scrape sides and bottom of the bowl and beat for a couple more minutes. Transfer into a pipping bag with a large tip (1M).

Crust:

  • Pulse Triscuit crackers in a blender until crumbles appear.
  • Mix cracker crumbs with brown sugar, melted butter, and vanilla extract until fully incorporated.

Assemble the cheesecakes:

  • Pit and chop cherries.
  • Add a tablespoon (or tablespoon and a half) of crumble mixture into each jar and lightly press.
  • Add some cherries to the bottom. Pipe chocolate cheesecake into each jar to fill. Add some more cherries on top and pipe a little more cheesecake over the top of cherries.
