I get a little sad when Christmas is over. Months of preparation and anticipation are over in one day and then it’s all done.
Christmas is like a wedding. It takes so long to plan, shop, and wait for the big day. Then, the big day comes and there is lots of excitement, you’re not really sure what’s happening, and there are people everywhere with food, booze and presents. Afterwards, everyone leaves and the feeling of relief comes.
After all the presents have been played with and put away, I get a little sad. There is nothing but cleaning up left and going back to work. Going back to work is the saddest part though.
New Year’s used to be a huge holiday for me. In Russia, New Year’s is THE biggest holiday of the year. The presents, the decorations, and the tree are all for New Year’s. Kids get to stay up past midnight and celebrate with adults. Lot’s of fireworks, food, and did I mention the presents?
New Year’s was my absolute favorite holiday, even after I moved to US and started celebrating Christmas in addition to New Year’s. It was my favorite holiday until I had my son. When you have kids, partying all night is not the best anymore. Kids don’t seem to care what holiday it is, they still get up very early in the morning the next day.
I stopped making New Year’s a big deal while the kids are so small. I can never find a baby sitter and the older I get, the harder it becomes to function on only a couple of hours of sleep. My little guy never even wanted to stay up with us to watch the ball drop, so he was fully rested at 7 am. When I was a kid, getting to stay up was the best part and he just wants to go to sleep.
But, even without big booming parties, my husband and I get some champagne, some snacks, and watch Time Square festivities from the comfort of our bed. This year, I will be making us some Queso Blanco Dip and these Mushroom Cheese Puff Bites. It will be a cheesy New Year celebration!
Mushroom Cheese Puff Bites
Ingredients
- 17.3 oz (2 sheets) puff pastry
- 2 tbsp olive oil for cooking
- 16 oz cremini mushrooms
- 1 medium yellow onion
- 6 garlic cloves
- Salt
- 12 oz sharp white cheddar cheese
Instructions
- Thaw pastry sheets and lay them on a large cutting board.
- Preheat oven to 400 and grease a muffin pan. (24-cup muffin pan or 2 of the 12-cup ones.)
- Preheat a large cooking pan over medium-high heat. Add oil.
- Dice onion and garlic and saute until onion is transparent.
- Dice mushrooms and add them to the pan. Season with some salt. Saute over medium-high heat until done. Drain off liquid and transfer mushrooms to the mixing bowl.
- Let mushrooms cool a little bit and then, mix in grated white cheddar cheese. Mix well.
- Roll puff pastry a little bit (just a little) and cut the sheets into 9 squares each.
- Place each square into the muffin cup, forming a little cup out of the pastry square.
- Fill each pastry square with about 1 1/2 tablespoons of mushroom cheese mixture.
- Bake for 15-17 minutes, until pastry is golden-brown.

I made these twice in the last few months! They were a big hit! In answer to those who want to use a canned flaky biscuit, you definitely can! I bought a can of 10 biscuits but divided the biscuits into 3 pieces so they are thinner. Put them in mini muffin tins and baked at 350 instead of 400. Made them ahead of time and reheated in microwave. Can’t tell you how many compliments I got!

Hi Dawn,
To be honest, I’ve never frozen cooked puff pastry before so I’m not sure how it holds up to reheating. As far as filling, there will be some oil separation from cheese. Personally, I wouldn’t recommend freezing them but if you wish, you can experiment ahead of time.

Thank you 🙂 You can definitely make them in a mini muffins pan just beware that it’s going to be a bit of a pain. You’ll need to cut the pastry smaller and it might be harder to pack them into a small cup like that. Otherwise, you can do it!

Oh, and the bake time might be less as well. So just watch the pastry and when it looks deep golden brown, pull them out of the oven.

I think the biscuits may not work because they might puff up too much and push out the filling. I haven’t tried using canned biscuits but I would imagine that’s what they would do.
May be if you roll each biscuit out a little first.

You can try minis and just use smaller pieces of pastry and less filling of course. It will just be bite sized. I haven’t made homemade puff pastry but I would imagine it cooks the same as frozen.

I made them regular size just to try them out. They are delicious. I’m certain they will work if you wanted to use a smaller/mini muffin pan. They were easy to prepare and there was more than enough filling (and extra) to fill eat cup. They would probably taste great too if one added a tiny bit of sausage or even a bit of spice. I used a Parmesan cheese instead of cheddar. Great recipe! Thank you. I’ll be making them again.
