Fruit bowls are definitely not a new invention or anything, but the “art” behind it is definitely new to me. This past weekend, my sister stayed with me and she introduced me to this delicious idea. She was sitting on the couch, glued to her phone, as all teenagers are, and then she called me over to see her new obsession. She was talking about how she has been drooling over these gorgeous fruit bowls that some shop created in California. She was just drooling over her Instagram feed and wishing the store was near her. There were so many different fruit combination and topping options, I gotta say, I got hypnotized by them myself.

My first though, and what seemed to be the most obvious option to me, was “why don’t you make them yourself?” Apparently, that is not the first thought that comes to a teenage mind. Well, we just happened to be going to a farmer’s market the following morning and I happen to stumble on one booth that was selling BEAUTIFUL mangoes and lychee fruit. That was actually pretty lucky because I don’t normally see exotic fruit like lychee at the local market. It was meant to be.

When we got home, I made all of us these gorgeous fruit bowls as a light lunch. My sister was ecstatic and most importantly, she saw how fast and easy it is to make this at home and that she didn’t have to wait to find a shop that sells them.

This fruit bowl is perfect to make as a light and flavorful breakfast, lunch, or even dessert. The combination of mango, lychee, and blueberries is great together. You get a delicate balance of sweet, tropical flavors and a slight tartness/sourness from the mango. We all enjoy a little crunch in our dishes and granola is a beautiful way to add that. Flavor of granola is completely up to you but I would recommend using coconut flavored granola for additional tropical feel.

This fruit bowl is smooth and sweet on it’s own but if you crave a little extra sweetness, you have the option of adding honey or agave nectar. If you’re not a fan of either, you can also opt for pure maple syrup. If you’re also craving a little protein in your bowl, you can add some cottage cheese or a dollop of ricotta.

Ingredients

  • 1 large ripe mango
  • 5 ripe lychee fruit
  • 1/2 cup blueberries
  • 1/2 cup coconut granola flavor is optional
  • 1 Tbsp chia seeds
  • 2 Tbsp sweetened coconut flakes
  • 1/2 Tbsp honey or agave nectar optional

Instructions

  • Peel mango and cut out the seed. Chop mango meat into small cubes and add it to a mixing bowl, saving as much juice as possible.
  • Peel lychee fruit and take the meat off the seed. I recommend opening lychees over the mixing bowl so that you can collect the juice as you open the fruit.
  • Chop lychee fruit and add it to the bowl as well. Again, try to save the juices.
  • Add blueberries to the bowl as well. (Add honey or agave nectar if using.)
  • **Note: chia seeds soak up juices as they sit in liquid and become gelatinous. If you don't like that texture and prefer them crunchy, add chia seeds right before serving. If you don't mind that texture, mix them with fruit.**
  • Add mixed fruit into a bowl and top off with granola and coconut flakes.
