So, I had big plans for the Memorial Day. Hubby was working in the morning but after work, I was going to send him to grill some shish-kabobs. (I love me some chicken kebabs!) Then we got the “great news,” hurricane, that got downgraded to tropical storm, was headed right for us…head on! Oh the joys of hurricanes and panic that happens at the stores on those days.
 
Well, of course it as raining on and off all day but some sun did peek through in between. He decided to grill anyway if it clears up but luck wasn’t on our side. Just in case, I marinated the meat and got it all tasty and ready for the grill. Shish-kabobs were great…in the oven! No grilling for us…
 
To cheer up this ugly, rainy day for us, I made these AWESOME Macaroon Brownies!

Ingredients:

Ghirardelli Chocolate Supreme Brownie Mix (My all time favorite brownie box mix)

14 oz shredded coconut
14 oz of condensed milk
1 tsp vanilla
2 egg whites
1/4 tsp salt

Directions:
1. Preheat the oven to 350 and grease a 9×9 baking dish

2. Prepare brownie mix according to the box instructions and pour into the baking dish.

3. Combine coconut flakes, condensed milk, egg whites, vanilla and salt in a large mixing bowl. Mix very well.

4. Layer the macaroon batter over the brownie batter, spread it evenly.

5. Bake for 45-55 minutes until the batter is no longer giggly.
