Amazing recipe for a classic dressing! This Light homemade Caesar Dressing is made with non-fat Greek yogurt and has no raw eggs in it. It is so delicious, you will be eating Caesar Salads for a week straight!

Caesar dressing is my second favorite dressing out there. I love it and I could eat a Caesar salad every day.

(Ranch is my absolute favorite, of course. Ranch is the bomb and I could eat it with just about anything!)

Caesar is one of those salads that I really want to have when I’m at a restaurant but, since it’s normally a more fattening dressing choice, I make the smart choice and go with a light vinaigrette instead. Once in a while, it’s good to be bad though.  But, in order for me not to feel too bad, I came up with my own light version of Caesar.

 This dressing tastes absolutely amazing and does not lack any flavor at all. Instead of mayo, I used non-fat Greek yogurt and there are no raw eggs.

I know that traditional Caesar Dressing is made with egg yolks but personally, I prefer not to eat raw eggs if I can help it. So if you are looking for a traditional Caesar, this is not it. This is a better one!

It is an easy (super easy, actually) and light version! Don’t be thrown off by the light either because, as I mentioned above, there is no compromising on flavor for less calories in this dressing!

As far as adding anchovies…I like it in Caesar but of you don’t, just skip it. Anchovies can be optional and so as deciding whether to use anchovy fillets or paste.

So go ahead, give it a try! Trust me, it will not disappoint!

Ingredients

  • 2 large garlic cloves
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 Tbsp white vinegar
  • 1/4 cup non-fat Greek yogurt
  • 1/2 cup extra virgin olive oil + 2 Tbsp
  • 1 tsp lemon juice
  • 1 tsp anchovy paste or 1 anchovy fillet
  • 1/3 cup Parmesan cheese
  • Fresh cracked pepper
  • Salt optional

Instructions

  • Combine all ingredients (except salt) in a blender and pulse several times, until all well blended and smooth.
  • Taste before deciding to all salt as anchovy paste is pretty salty.
  • Refrigerate until ready to use.

      You can keep it in a mason jar or a container with a tight lid for 3-5 days.

    Can this dressing be made a few days ahead of time and stored in the fridge?

      I’m so sorry for a late response. Yes, you can store the dressing in the refrigerator, in an air-tight container. I wouldn’t store it for more than a week though.
