BANANA CAKE
I got something special for my backyard the other day. I’ve always wanted to grow my own citrus trees and I finally got one. It is so exciting even though it’s still teeny.
I got myself a Mexican Key Lime tree. While I was choosing my very first citrus tree, I spent 20 minutes just sniffing orange trees. That scent is intoxicating and I also grabbed it and put it in the card three times. I had to keep reminding myself that my backyard is small and has awful soil. Dirt layer in my yard is only 2 inches and the rest is clay and gravel. It’s terrible for attempting to do any kind of gardening. That’s why my herbs are in pots and my citrus tree will be grown in giant pots. If I want to have a garden, I’d have to build garden beds first. (Which is actually something I’ve been asking my husband to build me for a couple of years now. It would be a great Mother’s Day gift…hint, hint!)
So, after spending 30 minutes just sniffing the amazing aroma of citrus tree, I settled in the small key lime tree as my first one. As time goes on, I plan to expand my collection and hope to get one of each tree. It would be amazing to be able to walk out to my back yard and pick a couple of limes or lemon off my own tree. Spring time would be heavenly with blooming citrus tree right outside my window.
Until I can get my citrus tree collection bought, planted, and producing fruit, I have to settle for store-bought lemons for my cakes, cookies, pastries and seafood. Nothing wrong with store-bought lemons, I just like the freshness, convenience and scent of home grown.
I’ve actually been buying a ton of lemons lately. I love using lemon in spring recipes. It’s bring, sunny, and reminds me of the beautiful weather that is to come. Like this cake, it’s a wonderful spring/tropical banana cake that would be lovely to serve for spring holidays.

Lemon Coconut Banana Cake
Ingredients
Cake:
- 3 cups all purpose flour
- 1 cup white granulated sugar
- 3/4 cup brown sugar
- 1 tsp baking soda
- Zest from 1 lemon
- 1 1/4 cup vegetable oil
- 3 eggs
- 2 tsp vanilla extract
- 4 medium ripe bananas
- 2/3 cup buttermilk
- 1 cup sweetened coconut flakes
Topping:
- 14 oz can sweetened condensed milk
- 4.5 oz cream of coconut
- Zest from 1 lemon
Frosting:
- 8 oz cream cheese
- 4 oz cream of coconut
- 12 oz whipped topping like COOL WHIP
- Zest from 1 lemon
Topping:
- 2 cups sweetened coconut flakes
Instructions
Cake:
- Preheat the oven to 350 and grease a 9x13 casserole baking pan.
- Combine flour, both sugars and baking soda in a large mixing bowl.
- In a separate bowl, whisk together oil, buttermilk, eggs, vanilla extract, and smashed bananas. Whisk until all combined.
- Pour wet ingredients into the dry ingredients. Mix with a spatula until smoothly combined.
- Fold in lemon zest and coconut flakes until evenly distributed.
- Pour cake batter into the prepared baking pan and spread it evenly.
- Bake for 40-45 minutes.
- Let the cake cool for about 10 minutes. Poke holes all over the cake (use something that is about a pencil thickness).
Syrup:
- In a mixing bowl, whisk sweetened condensed milk, lemon zest, and cream of coconut.
- SLOWLY and evenly, pour sweet sauce mixture all over the cake. Let it seep in and cool completely before frosting. I usually pour it slowly and try to hit every hole so the not all the syrup runs off the sides.
Frosting:
- Beat cream cheese on medium-high speed, until smooth, 1-2 minutes. Scrape sides and bottom of the bowl.
- Lower the speed to low and pour in cream of coconut. Mix on low until starts to incorporate and then bring up speed to high and beat for 2-3 more minutes. You may need to stop in the middle to scrape sides and bottom of the bowl.
- Turn down the speed to low and add COOL Whip and lemon zest. Fold until evenly incorporated and smooth.
- Once the cake is cooled completely, evenly frost the cake all over.
- Optional: spread coconut flakes all over the top of the cake.
- Cake can be served right away at room temperature or cold. Personally, I think it's best after the cake had some time to soak up the syrup.Cover and keep the cake refrigerated when not serving.

I made just the cake, didn’t use the topping or icing, cut the oil to 3/4 cup, juiced the lemon into the wet ingredients and used unsweetened coconut. It was still plenty sweet, and had a great crumb and tang Perfect recipe for me because I needed to use up 3 bananas, some lemons and buttermilk. Kids will enjoy this in their lunchboxes next week.

Looks yummy. I have lemon curd on hand (made with duck eggs) and coconut syrup (the type used to flavor coffees). I’m wondering how this would work for the syrup, I don’t have sweetened condensed milk or cream of coconut at home. Would this substitute? Also, in your recipe, is this cream of coconut the type used for Thai soups, or the one used in coconut drinks?

Hi there!
I’m not sure where you are trying to use lemon curt but that will alter the texture of the cake batter, use fresh lemon zest for it. (Zest is just the outer yellow skin of the lemon, not the white rind. That will give you the most lemon flavor.)
As far at topping, you are making a creamy syrup so you need sweetened condensed milk and cream of coconut. Coconut coffee syrup won’t work, sorry! Cream of coconut that I use here is the sweetened one, that’s used in frozen cocktails, yes. You can find sweet cream of coconut where the cocktail mixers are or in Ethnic foods section.
