You can also choose to keep the carrots whole, or cut them into about 1.5 inch chunks diagonally.
For holidays, I love to keep the carrots whole for the presentation. If you want to keep the carrots whole, opt for smaller carrots, like organic carrot bunches. If there are some larger ones in a bunch, cut them in half length-wise.
No matter what carrots you choose, keep in mind that you want to keep the carrots uniform in size so that they cook evenly.
How to Make Honey Roasted Carrots
Start off by preheating the oven to 425° and line a large baking sheet with parchment paper.
While your oven is preheating, wash and peel the carrots. If some of the carrots in the bunch are larger, halve them so they bake evenly. Arrange the prepared carrots on a baking sheet.
Whisk together the olive oil, honey, orange zest, salt, and pepper. Pour the mixture evenly over the carrots, and mix them to coat evenly throughout. Spread out carrots in one even layer.
Bake the carrots for about 15-20 minutes, toss them again on the baking sheet, and serve right away!

To reheat them, I recommend placing the cold carrots in a skillet over medium heat until warmed through. You could also reheat them in the microwave in 30 second increments until they’re as warm as you’d like them to be.
