Unbelievably delicious grilled cheese sandwich. This deliciousness is made with Gruyère cheese, blue cheese crumbles and caramelized onions.
It’s National Grilled Cheese Month!! Whoo-hoo!
Can you tell that I love this national food holiday? Grilled cheese is pretty much my favorite type of sandwich. Main reason is cheese, of course. I’m a huge cheeseaholic and I say it proudly. So a sandwich that I can jam as much different cheese into as possible and then melt it, has my heart for sure. Another reason is the fact that I can make as many flavor combinations as my brain can come up with. How can you not like that?!
I made this deliciousness for lunch last week and oh…my …gosh! I think I melted into my chair with every bite because of how delicious it was. But what I can’t believe is that there are times when I still have to convince my husband to try something a little unusual that I make. But you know, every time it happens, he polishes off whatever dish I made in seconds. This grilled cheese was no exception. Polished it off in two minutes with a smile on his face!
Gruyere and Caramelized Onion Grilled Cheese
Ingredients
- 1 medium yellow onion
- 2 Tbsp vegetable oil
- Salt
- Pinch sugar
- 4 slices pumpernickel bread
- 6 oz soft Gruyere cheese not shredded
- 1/3 cup blue cheese crumbles
- Optional: 2 Tbsp crushed pecans
Instructions
- Preheat a large cooking pan with oil, over medium-low heat. Add sliced onions and sprinkle with a little bit of sugar and some salt. Stir well. Cook slowly (medium-low heat), stirring often, as the onions caramelize to nice brown color. It can take about 20-25 minutes. Set aside when done.
- Grease the pan and leave the heat on medium low.
- Lay all slices of bread in the pan. Divide sliced Gruyere cheese among all 4 bread slices, covering them evenly.
- Divide blue cheese crumbles among two slices of bread and divide caramelized onions among the other two slices of bread.
- Cover and cook just until cheese starts to melt. Once cheese is mostly melted, place slices of bread with blue cheese crumbles on top of bread with caramelized onions. Cook for another minute or so and serve.
- (If using pecans, add them to the slices with caramelized onions.)
