I have an obsession with avocados.

To tell you the truth, I used to hate avocados. Like a full blown aversion. I didn’t want guacamole or avocado anywhere near my food. I’m not very sure what made me change my mind, but I suddenly fell in love one day. It could have been a friend that I used to work with. She is head over hills with avocados and used to bring one with her lunch to work almost every day. She’d eat slices of it just like that. I think one day I decided to give it another shot and taste some guacamole. No idea what was suddenly different but my eyes lit up and I couldn’t stop eating it.

Now, every time I go to the grocery store or a market, I have to pick up a couple of avocados. I actually got some gorgeous lettuce and avocados at the market last week and I wanted a salad as soon as I got home. I got an idea for avocado dressing and it turned out delightful!

After using it on a salad, I ended up using it on a few other recipes that week. I used it on taco burgers and zucchini boats. Zucchini Boats recipe is actually coming this week and you do NOT want to miss it!

Creamy Avocado Dressing

Delicious, smooth and creamy avocado dressing, made with fresh avocados, jalapeno pepper, buttermilk and cilantro.

Ingredients

  • 1 large ripe avocado
  • 1 large jalapeno, seeded
  • 2 Tbsp fresh minced cilantro
  • 2 Tbsp sour cream
  • 1/2 cup buttermilk
  • 3 Tbsp milk
  • 1/2 tsp cumin
  • Salt to taste

Instructions

  • Take out the pit and the skin off the avocado.
  • Place all ingredients in a blender and pulse until completely smooth and blended.
  • Store in the refrigerator in an air-tight container, like a glass mason jar. (Preferably a glass container.)
  • (It should be good for 3-4 days.)

    That is exactly how I felt about cilantro.Years ago my sister-in-law said she made a fantastic salso ( this is when salsa was just becoming popular) and she brought us some. Hubby and I told her how much we liked it — we didn’t. We had never really experienced cilantro and we didn’t care for the taste. Now we LOVE it!! It just goes to show that you really have to try something more than once — now insects and rodents I won’t give a try even the first time. I shutter just thinking about it. Our always have avocados at our house. We split one every night and have it on our salad. I like the idea of putting it in the dressing — thank you for the recipe.

      I used to not like celery either but not I eat it straight.
