This is one AMAZING bread! Coconut Key Lime Bread is a soft bread that explodes with flavor in every bite!

Coconut Key Lime Bread slices on a table

Coconut and key lime is a heavenly flavor combination and this bread is pure heaven. Every bite will make your toes curl! Yeap, this bread is like an orgasm for your taste buds. Coconut goes like “POW” and key lime goes “POW” and together they go “BOOM” and you kick back with your feet up and imagine that you are on a sunny beach, enjoying this Coconut Key Lime Bread.

For this wonderful bread, I use fresh coconut and it was the best choice. It’s been a long time since I’ve made my own coconut flakes. Opening a coconut was never my favorite part, actually, I used to hate it. I love coconut, but didn’t feel like wrestling with it all night. I remember spending about 2 hours tring to open it with a hammer when I was a kid.

But no more! I’ve learned an incredibly easy way to open a coconut in less than a minute! Thanks to Lisa and her awesome post on How to Crack a Coconut, I’m fresh coconut happy now. So I used fresh coconut flakes for this bread and froze the rest. You don’t have to use homemade coconut flakes, you can use store-bought to save yourself some time.

I also soaked the coconut in some skim milk to give it a little moisture. Squeeze the coconut flakes after soaking them for a few minutes and enjoy some coconut milk!

  1. Want to make this recipe but my mom she loves coconut & she can have everything of coconut except white shreds of coconut she’s allergic! What would be a good substitute for the coconut shreds but still keep the same flavor?

    1. I am guessing she is allergic to coconut but can have artificial flavoring? This bread gets a lot of its moisture from the soaked coconut flakes you can take them out but it will not be the same texture and will be a bit dry, if you make it like that adjust the cooking time because it will cook faster.

A better option may be to make my coconut banana bread. It gets moisture from the bananas. You can take out the coconut flakes and replace them with a teaspoon of artificial coconut extract and extra banana.

Here is a link to that recipe: https://www.willcookforsmiles.com/coconut-banana-bread/

    1. Oh yes, it’s a great combo! Thank you, Linda!

  11. Marisa @ All Our Way says:

That certainly sounds yummy. I love quick breads — the smell in the house is heavenly and then the reward is the bread itself. Thank you for the tip on the coconut– I will definitely check it out. I see you use KA flour. That’s all we buy — in 50 pound bags although we’ve just ordered 25 lbs. of Caputo “00” flour. Love the photos. Now that we’re home I’m planning on painting some would for staging.

    1. Thank you so much, Marisa! I love KA flour and I hope that I could find some all-purpose at my stores.

      1. Do you need to use bread flour? Or can you use all purpose?

        1. I would suggest using bread flour because of the higher protein content. The texture will be much better. If you don’t have access to bread flour, try all purpose. I don’t think the difference will be huge since this is not a yeast bread.

  12. Lisa | Je suis alimentageuse says:
