If you had to choose, what would be your first choice for breakfast, waffles or pancakes? There is a great debate at which is best breakfast food. Personally thought, I stand on the side of French Toast, but waffles are great in their own special way.
Homemade waffles are soft and fluffy on the inside and crispy on the outside. It takes just about 30 minutes to make them and serve them fresh, or freeze them for later! It will only take about 5 minutes to prepare from frozen by popping them in the toaster oven, toaster, or air-fryer.
One of the best things about homemade waffles is that they are easily frozen. Then, just grab one out of the freezer and pop it in the toaster while still waking up. By the time coffee is ready, so as breakfast.
To personalize these buttermilk waffles even more, try adding berries, cinnamon, or chocolate chips to this waffle batter to get a different flavor every time. And remember, waffles are not just for breakfast, it’s great with chicken or to be substituted as sandwich bread.
Ingredient Notes and Tips
Buttermilk – it’s best use a low-fat buttermilk, as I’ve found it provides both the best texture and flavor for baked goods.
Butter – It’ll need to be unsalted and you will need to melt it. After it melts, let it cool just a little bit prior to using, so it doesn’t scald the eggs.
Sugar – here is a little difference between white and brown sugar: brown sugar will add more moisture, making softer waffles, while white granulated sugar will help with crispier waffles. Personally, I prefer brown sugar.
Flour – use all-purpose flour for the waffles. Make sure you spoon the flour into the measuring cup instead of dipping the cup directly into the bag! Then, cut the excess at the top with the back of a knife to level. If you dip the cup, you’ll pack the flour into the cup.
Baking Powder and Baking Soda – Make sure that neither of these are expired! Use your baking powder and baking soda within 6 months of opening the container for the best results. (Tip: label opening date on the container.) Believe it or not, it does start to “expire” and loose it’s effectiveness after 6 months. If you’re wondering why your baked goods haven’t been raising properly, these could be the culprits.)
Eggs – if you can remember, try to let the eggs sit on the counter for 30 minutes before using, to warm up to room temperature.

How To Make Homemade Waffles
Make the batter. In a mixing bowl, whisk eggs vigorously for a few seconds. Whisk in the melted butter, buttermilk, brown sugar, vanilla extract, and salt.
Slowly whisk in the flour, baking powder, baking soda, and carefully whisk just until combined.
PRO TIP: Let the waffle batter sit for about 10-15 minutes on the counter while preheating the waffle maker. This will give all of the ingredients a chance to activate and will result is softer, fluffier waffles.
Cook the waffles. Let the batter sit for 10-15 minutes while preheating the waffle maker. Lightly grease the waffle maker with oiled paper towel (not a cooking spray) and cook waffles in a waffle maker per your waffle maker’s instructions.
NOTE: Remember, all waffle makers are different! They make different size and shape of waffles and have different cook time.
PRO TIP: To keep cooked waffles warm while making the rest, preheated the oven to 200°F and keep waffles in the oven on a baking sheet.
Tips For Making The Best Homemade Waffles
- It’s best to let your cold ingredients like eggs and buttermilk get to room temperature. Take out the eggs and measure out the buttermilk. Let it sit on the counter for about 30 minutes.
- Let the waffle batter sit for about 15 minutes, while the waffle maker is preheating. This will give all ingredients a chance to activate and will result is softer, fluffier waffles.
- Make sure to read the instructions for your waffle maker for the amount of batter to pour at a time and how long to cook the waffles.
- To keep cooked waffles warm while making the rest, pre-heated the oven to 200° and keep waffles in the oven, on a baking sheet.
- To cool waffles faster in order to freeze them, place them on a wire rack. This will cool the waffles evenly and keep the bottom of the waffles from accumulating moisture.

This homemade waffle recipe is so easy to make your own with different flavor options! You can add fresh fruit or dried fruit, chocolate chips, cinnamon, vanilla beans, chopped nuts.
TIP: If adding cut fruit, toss them with a little bit of flour before folding them into the batter. This will prevent cut fruit from adding extra moisture to the waffles.
You can easily store them in the refrigerator for a couple of days. Just make sure to store them in an airtight container. The waffles should keep for up to 5 days, but they do start to dry out after 2 days. It’s best to store them in the freezer for more than a couple of days. (See below for freezing waffles).

In the air fryer, reheat waffles at 360°F for 2-3 minutes. Frozen waffles will need an extra minute or two.
How To Freeze Homemade Waffles
Freezing waffles could not be any easier! After the waffles are cooked, make sure to cool them completely. Cool waffles on a wire rack so they cool faster and evenly without accumulating moisture on the bottom.
Place waffles (all waffles or in batches) into a large zip-lock freezer bag(s). Get as much air out as you can and close the bag tight. Label and date the bags.
Freeze waffles for up to 3 months.
Frozen waffles can easily be reheated and toasted in a toaster. (More information on reheating is above, in the FAQs section.)
