THE Chocolate Chip Cookies

As I mentioned in my previous post, I made cooking for my friends to go along with their gifts. In the last post, I shared Peanut Butter Cookies. This time I will share the “greatest chocolate chip cookies”…at least that is what I heard from everyone who tried it. 

These cookies were for by boss, chocolate chip cookies are his favorite. Since there are dozens and dozens of chocolate chip cookie recipes out there, I wanted to try something new. I found this recipe on The Apron Archives. She shared this recipe that was originally published in Cook’s Illustrated and I am very happy to have found it!
It takes a little bit longer and has a couple of extra steps but it is SO WORTH IT!!

Ingredients:
1 ¾ cups unbleached all-purpose flour
½ tsp. baking soda
14 Tbsp. unsalted butter
½ cup granulated sugar
¾ cups packed dark brown sugar
1 tsp. table salt
2 tsps. vanilla extract
1 large egg
1 large egg yolk
1 ¼ cups semisweet chocolate chips or chunks

Directions:
Preheat the oven to 375 degrees and like the cookies baking sheet with parchment paper.
1. Heat 10 tablespoons of the butter in a skillet over medium-high heat until melted. Continue cooking, stirring constantly until butter is darkened to golden brown and has nutty aroma, 1 to 3 minutes.

2.Transfer browned butter to large heatproof bowl. Stir remaining 4 tablespoons of butter into hot butter until completely melted.

3. Add both sugars, salt, and vanilla to bowl with butter and whisk until fully incorporated. Add egg and yolk and whisk until mixture is smooth with no sugar lumps remaining, about 30 seconds. Let mixture stand 3 minutes, then whisk for 30 seconds. Repeat process of resting and whisking 2 more times until mixture is thick, smooth, and shiny.

4. Using rubber spatula or wooden spoon, stir in flour mixture until just combined, about 1 minute. Stir in chocolate chips.

5. Scoop out cookies dough, about 2 tablespoon-size and place on the baking sheet about 2 inches apart. Bake cookies until cookies are golden brown and still puffy, and edges have begun to set but centers are still soft, 10 to 12 minutes.

6. Cool on the wire rack.
