Cauliflower Fried Rice is made with all the classic fried rice ingredients like onions, carrots, peas, garlic, eggs, and soy sauce. Substituting cauliflower rice instead of rice is a great low-carb alternative. No food processor is needed for my recipes and it is easily made in about 20 minutes.

CAULIFLOWER FRIED RICE
I have several friends and readers asking me if they can make substitutions on some of my recipes to make it low-carb or simply healthier, and fried rice is one of those recipes. We all love fried rice because it’s simple and transforms plain rice into a delicious dish. Cauliflower is a great substitution where you will get all the fried rice flavors without the high carbohydrate and calorie count of rice.
As much as I love rice (and potatoes, and bread, and pasta), I try not to eat it every day and that’s where healthy substitutions come in. Cauliflower is a wonderful vegetable that I call a “power vegetable” because it’s healthy and can be transformed into so many dishes.
Pizza crust made out of cauliflower is by far my favorite low-carb substitution and I always say that it’s ten thousand times better than any gluten free pizza I’ve ever had. Cauliflower fried rice is a close second but it does take the first place in ease of preparation. It takes only 20 minutes to prepare from start to finish.
When I make cauliflower rice, I usually take the easy/lazy way out and use a box grater. I am way too lazy to put together and wash 10 different part of my food processor just to make some cauliflower rice. It’s also better when cauliflower rice has a little bit bigger crumb when being used as rice substitution.
Using a box grater saves me a lot of time and clean up.
HOW TO MAKE CAULIFLOWER FRIED RICE
Cauliflower rice:
Cut the leaves and the bulky stem off and discard. Wash cauliflower well and pat dry. Cut the head of cauliflower into 4-6 chunks. Use large holes side of the box grater to grate all the cauliflower chunks.
Cauliflower Fried Rice:
Prepare all your ingredients first because this is a fast recipe. So dice carrots and onions, press garlic, grate ginger (if using), and measure soy sauce, and whisk eggs in a bowl with a little bit of soy sauce.
Make sure to preheat a large pan or a wok first and then add peanut oil. Sauté diced onions, peas and carrots until softened and starts to brown. Once it’s soft, take the veggies out of the pan and set aside.
Add a little bit of oil to the pan if needed and add garlic and ginger. Sauté just until fragrant and pour in whisked eggs. Stir eggs to scramble and when eggs are mostly done, add riced cauliflower. Stir until all mixed together and add veggies back into the pan.
Drizzle soy sauce all over and cook for about 3-5 minutes, slowly stirring often so the cauliflower cooks evenly.
Serve right away.
WHAT MEAT TO ADD TO CAULIFLOWER FRIED RICE
Chicken – to add chicken to cauliflower fried rice, you will need to cook chicken first. Use either chicken breast or thigh meat and cut it into small pieces. Cook chicken with some oil and a little bit of soy sauce until done and take it out of the pan. Proceed with the recipe instruction to cook the veggies, egg, and riced cauliflower. Add chicken back to the pan at the same time as the veggies.
Shrimp – to add shrimp to cauliflower fried rice, you would follow the same method as the chicken. Cook shrimp fist in the large pan with some oil and a little bit of soy sauce. Cook shrimp for about 3-4 minutes of each side, depending on the size of shrimp and take it out of the pan when completely pink and opaque. Add shrimp back to the pan at the same time as the veggies.
Pork/ham – one of the best ways to use up leftover ham or pork chops is to dice it up and use it in fried rice. Same can be done with cauliflower fried rice. Add ham to the vegetables when vegetables are almost done since ham is already cooked.
HOW LONG DOES CAULIFLOWER FRIED RICE LAST
Cooked cauliflower rice will last 3-5 days in the refrigerator when stored in a food storage container with a lid. Make sure to keep it air-tight whether you use a storage container or just plastic wrap over the bowl.
HOW TO REHEAT CAULIFLOWER FRIED RICE
Cauliflower fried rice is very easy to reheat and will take just a few minutes. The best way to reheat cauliflower rice is in a pan or a wok over medium heat. Make sure to preheat the pan fist and add leftover cauliflower fried rice to the hot pan. Sauté, stirring often, until just heated through. That will only take a few minutes.

- 1 medium carrot
- 1 cup frozen peas
- 4 garlic cloves pressed
- 2 tsp grated fresh ginger optional
- 2 eggs
- 2 tsp soy sauce
- 4 cups riced cauliflower
- 3 tbsp soy sauce
