If you love the Calypso Cooler at Chili’s, you’re going to fall head over heels for this copycat recipe! Dare I say… It’s even better than what you can order at the restaurant. This fun tropical cocktail features spiced rum, peach schnapps, orange juice, lime juice, and grenadine. Perfect fruity, tropical cocktail for the summer!
Make some extra rum cocktails this summer and I can’t recommend the Painkiller and the classic Daiquiri enough!
Calypso Cooler
Hot sun beating down outside, summer has most certainly arrived, so it’s time for no bake recipes, fruity desserts, and above all else – tropical cocktails! Rum is a staple of the summer season, and that’s because of how beautifully it mixes with fruit juices. In this simple recipe, it’s orange and lime juices combined with peach schnapps and rum that create that delightfully beachy flavor.
Honestly, there are so many rum cocktails out there that feature light rum, coconut rum, and dark rum. The Calypso Cooler has got to be my favorite spiced rum cocktail. I just love the the combination of flavors with the peach schnapps!
There are quite a few benefits to making your own Calypso Cooler versus heading to your local Chili’s. First off, you’re saving money! The price of the ingredients, when considering how many drinks you can make, ends up being much less than the price of ordering an individual drink. And of course, when you make your own a Calypso Cooler at home, no-one will under-pour or use pre-mixed cocktails. You get the best cocktail using your own, favorite ingredients.
How to Make a Calypso Cooler
Ingredients You’ll Need
- Rum – Spiced rum should be your go to rum for this recipe, it works great with peach flavor.
- Peach Schnapps
- Orange Juice – you will taste it so use your favorite orange juice and make sure it’s pulp-free.
- Lime Juice – always use fresh squeezed lime juice for the best flavor!
- Grenadine – This will sweeten the drink even more, so be careful as you pour it in. You can always add more, but you can’t remove it!
Directions
Like any good cocktail recipe, the Calypso Cooler is so very easy to shake up!
Shake it up.
Add ice cubes and all of your ingredients, except grenadine, to a cocktail mixer.
Shake vigorously for just a few seconds. Strain the cocktail into a glass with fresh ice. Or, if preferred, serve the drink with the “dirty” ice. It’s not really dirty, it’s just the ice the drink was shaken with.
Serve.
Garnish your glass with fresh orange slices and a few cocktail cherries, and enjoy. Cheers!
Frequently Asked Questions
Can I use white rum instead?
For this cocktail recipe, it’s best to choose spiced or dark rum. Spiced rum is specifically the best because it has a signature tropical flair to it that’s created by the subtle fruity, spicy flavors. The way it mixes with the peach schnapps is really incredible. If you are craving a cocktail with white rum, blend up a Strawberry Daiquiri!
How much grenadine should I add?
That all depends on how sweet you’d like your drink to be! The orange juice and peach schnapps already give the Calypso Cooler a deliciously sweet flavor, so I don’t recommend adding over 3 teaspoons of grenadine. Sip the cocktail after you’ve poured it into your glass, then add the grenadine.
Can I make Calypso Cooler ahead of time?
Here’s the thing – I’m a pretty firm believer that once a cocktail is shaken, it’s ready to be sipped. However, you can make a pitcher of this drink ahead of time and keep it in your fridge for an hour or so prior to serving!
How to Serve Calypso Cooler
Once your Calypso Cooler has been shaken up, poured in to a glass, and sweetened to your liking, garnish and enjoy! It’s perfect for serving at pool parties, 4th of July block parties, and all other summertime festivities.
If you’re hosting a tropical cocktail hour starring the Calypso Cooler, pair it with equally as summery snacks like Mango Salsa or some chips and Guacamole.
