Baked Chicken Wings
Back in my college days, I was introduced to baked chicken wings and ever since then, I can’t even think of making wings any other way. A few friends and I went a long, long way to visit another friend at work who was working at a wing joint.
It did not seem to be worth it driving oven an hour just to try some wings that he’s been begging us to come and try. I was wrong. The wings turned out to be so good crispy on the out side and juicy on the inside. I was amazed that they were not fried.
That trip was made a couple more times just for those baked chicken wings. Those were my favorite wings until a couple of years later, when my husband started working for a smokehouse and we tried smoked wings. Hubs has been dying for a smoker ever since then.
For me, the rub on the smoked wings was what made the wings amazing. So I’ve combined the texture of baked wings with the dry rub from the smokehouse.
It took me a little while to get the dry rub as close to the original as I could. Even though the recipe for their dry rub is secret, hubby says I came pretty darn close and mine is even better because it has a little spicy kick to it.
This is definitely a winning chicken wing recipe and they will be a huge hit with all your family and friends.
Tips For The Best Baked Wings
When choosing the type of chicken wings, you have many options. You can get them fresh or frozen, you can get whole chicken wings, or you can get flats and drumettes.
If you’re using frozen wings, pull it the night before and let it completely thaw in the refrigerator for about 24 hours. You will need to pat excess water off the wings if any.
To minimize the clean up, line the rimmed baking sheet with aluminum foil first and then place the wire rack inside the baking sheet. Grease the wire rack lightly as well so the wings to stick to it.
Leave a little bit of space between each wing, don’t over-crowd them. This will help get the wings crispy all around.
This recipe can be double or tripled as needed.
If you absolutely want a dipping sauce with wings, buttermilk ranch will go well with them.
Cooking Instructions:
If using frozen chicken wings, make sure they are completely thawed first! Use a couple of paper towels to pat them dry before adding the seasoning.
Preheat the oven to 400° and fit a wire rack inside a rimmed baking sheet. Grease the wire rack before adding wings!
Place chicken wings into a large mixing bowl and drizzle with some oil. Mix to coat the evenly and then spread the dry rub seasoning all over as you toss the wings. Keep tossing the wings until they are evenly coated. (Use your hand to toss them so you can make sure the wings are coated well.)
Bake chicken wings on the wire rack for 45-50 minutes at 400°.

Hello, with chili powder being in the recipe for dry rub is it going to be too spicy for kids? Also same for the brisket rub? My grand babies love brisket tacos but I would be disappointed if the rub is too spicy for them…they are 2 1/2 and 1 1/2.
Thank you😊

You can cut back on the chili powder if you’d like, but my kids do not find it too spicy.

I have a question if you wouldn’t mind answering. Since I do not care for smoked flavor, would you mind telling me if these are heavy smoked flavor and also if so would I be able to sub regular paprika instead of smoked. Thanking you in advance.

Hi Caroline,
No, they do not have a very smokey flavor and yes since you do not like the smoked taste I would go with regular paprika instead.
