Delicious homemade Apple Vinaigrette made simply in a blender. Few simple ingredients come together in a dressing perfect for summer salads. This vinaigrette is also perfect for mixing into pasta, broccoli, and veggie salads instead of mayo or sour cream.
APPLE VINAIGRETTE
What a week I’ve had! It’s been busy and exciting but I am glad to be back to calm work days.
You may have noticed that I’ve had a few quiet days and most of the time it means that I am spending time with family. That was the case this past week as I took a little time off for travel and fun with my family.
I took my little sister to Huston for a college conference. It’s starting to slowly hit me that she is about to be 18 and graduating high school next year. It’s exciting and horrifying at the same time and we are not ready to let our little girl fly out of the nest yet. I feel like there are still so many lessons we need to teach her to prepare her for the world on her own.
On the other hand, she has grown into such a smart and responsible girl that she can face many obstacles life has for her. We do need to let her go to make her own mistakes and successes in life. It’s just hard though. Much like when they first start walking and want to explore everything. It’s hard not to walk with them every step of the way.
It was an exciting trip. I can’t wait to see where her journey takes her next.
Well, since I am back from my little trip, that means I am back to work and cooking. It’s tough to go back to working after a vacation and it’s tough to go back to cooking after spending days of having someone else cook for you.
I opened the fridge yesterday and realized the my dinner options were yogurt, cereal, fruit, salad or cooking.
….I had a salad as I was not ready to cook yet.
Not to say that my salad wasn’t excellent. Even a simple lettuce, tomatoes, and apple salad can be transformed with a tasty dressing. I actually have a new favorite dressing for the summer. I’ve discovered Apple Vinaigrette and I’m in love.
Summer salads tend to feature fruit and berries mixed into the salad and this is just the perfect dressing. It’s a little sweet, a little tangy, and so simple to make in the blender. The simple ingredients in this recipe is something that most of us already have on hand so chances are, you will be able to make this dressing tonight without running out to the store.
HOW TO MAKE APPLE VINAIGRETTE:
The process for making this dressing is as simple as combining the ingredients in the blender and pulsing it until the dressing is smooth.
The hardest part of making this vinaigrette is peeling and chopping apple and shallot.
If you do not have a shallot on hand, you can substitute another onion.
Brown sugar can be substituted by honey if you wish.
White wine vinegar can be substituted by white balsamic or apple vinegar.
There is a good chance that you already have all needed ingredients on hand and can make this dressing in minutes.

Apple Vinaigrette
Ingredients
- 5 oz red apple (gala, pink lady, McIntosh, or any other sweeter apple)
- 2 oz shallot (1 medium shallot)
- 1 1/2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 1/4 cup white wine vinegar
- 2 tbsp apple juice
- 3/4 cup olive oil
- 1 tbsp lemon juice
- Dash of salt
Instructions
- Peel and core the apple. Peel the onion. Chop both onion and apple for easier blending.
- Add all ingredients in a blender and pulse until the dressing is all blended and smooth.
- Refrigerate in a glass, air-tight container.
- (Generally a vinaigrette can be kept in the refrigerator for up to 2 weeks but I use it within 7-10 days to be safe.)

Could you use apple cider vinegar instead of the white wine vinegar, or would the flavor be too strong? What about white balsamic vinegar?

Hi, Erin! If that’s all you have then you can try it. I would suggest going with the white balsamic vinegar over the apple cider vinegar as it has a milder taste. Hope this helps! 🙂

So I followed the recipe as is and I love the flavor. However, I found that despite how long I blended the dressing, there was still a lot of apple pulp. Any suggestions for a smoother result?

Hi, Cole! You can bake the apples then remove the skin that would make the texture smoother but it would make the dressing a little sweeter, hope that helps!
