These easy apple pie blondies are made in just one bowl in less than an hour! When it comes to Thanksgiving desserts, I like having easy ones like this that I can trust. After all, everyone loves blondies! They’re chewy, soft, and in this case, apple spiced. They’re kind of like a brownie’s more fun sibling.
What puts these apple blondies a step above the rest is the fact that the pie filling is homemade, then mixed directly into the batter. I’ve seen plenty of recipes that feature blondies studded with apple chunks, and while I’m sure they’re great… There’s just something so satisfying about using real apple pie filling instead of just apple chunks by themselves.
Plus, the apple pie filling can be made ahead of time! That saves you even more hassle if you plan on serving these on Thanksgiving. I often make a big batch of apple pie filling and keep it in an airtight container, in the refrigerator for the times I want to use it in pancakes, doughnuts, or other treats like this one.
Ingredient Notes
Apples – I like using Gala apples for this blondie recipe, because they have a natural sweetness that compliments the rest of the ingredients. Remember to peel, core, and dice them.
Brown Sugar – You can use light brown sugar or dark brown sugar. The difference between the two is how much molasses is added.
Vanilla Extract – for the best results, try to use pure vanilla extract.
Apple Pie Spice – This blend of warm autumnal spices ideal for most apple desserts! Apple pie spice is a blend of ground cinnamon, nutmeg, and allspice.
Egg – make sure to pull it out of the refrigerator about 30 minutes before baking to let it warm up to room temperature.
Flour – all purpose flour works well is these simple blondies.
Baking Powder – Make sure it’s not expired. Baking powder should be used within 6 months of opening the container.

How to Make Apple Pie Blondies
Make the pie filling: Add butter and sugar to a pot over medium heat. Mix well, then toss in the diced apples and apple pie spice. Mix again and cook until the apples are softened with a lid on. Then, take off the lid and stir in the flour. The mixture will thicken (3). Remove from heat and let cool for a minimum of 15 minutes.
Prepare. Preheat the oven to 350°F and line a baking dish with parchment paper.
Make the batter: Combine the sugar and melted butter in a mixing bowl. Whisk the egg in vigorously (1), then whisk in the vanilla, baking powder, apple pie spice, and flour until combined (2).
Add the apples. Once the apples have cooled, fold them into the batter (4).
Prepare for baking. Once the apples have been mixed into the blondie batter (5), spread it into an even layer in the prepared baking dish (6).
Bake. Bake for about 22-26 minutes (7). Let the blondies cool before slicing and serving.
PRO TIP: Insert a toothpick into the center of the baking dish to see if the blondies have fully cooked. If the toothpick comes out clean, you’re good to go!
Tips for the Best Apple Blondies
- Don’t use the filling as a topping. Do note that apple pie filling is different from topping because it’s much thicker and contains flour. It won’t be good as a topping since it’s meant for mixing into the batter.
- Don’t over-mix the batter. This is not a cake batter, make sure you don’t use a blender or a mixer but a whisk and a spatula to mix it. Most whisking will be done with the eggs and then, only mix to combine.
- Make sure apple filling is cooled. Before folding the apple filling into the batter, make sure it’s cooled to about room temperature!
- Spread the batter evenly in the baking pan. You can grease your hands and help spread the batter evenly all throughout the baking dish. If it’s not spread evenly, the blondies won’t bake evenly throughout.
- Serve however you’d like. You can serve these blondies as a little snack, all on it’s own, or you can add caramel and ice cream on top to serve as a full dessert.

I recommend serving them warm, but they are really good cold as well. If you’re serving these apple blondies warm, they would make an amazing sundae with a scoop of vanilla ice cream on top and some caramel drizzle.
The first way to check if these blondies are done cooking is to gently touch them at the center. If it feels squishy, jiggly, or too soft, you will want to give them a few more minutes of baking. You can also insert the toothpick in the middle, if uncooked batter clings to it, it’s not done. Toothpick should come out clean or with a few moist crumbs.
Absolutely! You can easily double the recipe and use a 9×13 baking dish. You will need to add a few minutes to the bake time because the thickness will be slightly bigger.
Storing Suggestions
You can store the blondies in the same pan you baked them in or transfer them into a food storage container. I recommend keeping the parchment paper if you transfer the blondies into another container. Make sure to store it covered airtight and refrigerate. In the refrigerator, it will keep for 3-4 days. You can always warm up individual slices in a microwave for a few seconds.

- 1 tbsp flour
Blondies:
- 1/2 cup salted butter
- 1 egg room temperature
- 1 cup brown sugar
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1 tsp apple pie spice
Instructions
Apple pie filling:

Just made these to use up frozen apple pie filling I made last fall, and they’re so good! I did need to add about 10 min baking time, but that’s most likely due to altitude (Colorado Springs, baking is rough here lol). Definitely a recipe I’m going to write down for future use!
