With Mother’s Day right around the corner, I have a great dinner idea that you can make for that special lady in your life. Amazing filet mignon from Snake River Farms that is so tender, you won’t even need a knife. It’s seasoned with some espresso salt and seared to perfection. To help you with cooking your steak just the way you like it, I included some tips on how to “feel” steak temperature (doneness) without a thermometer.
This filet is served with a side of delicious sweet potatoes loaded with blue cheese, crispy bacon, scallions, and ranch dressing. This delicious dinner will make you melt into your chair with every bite.
Let me just tell you about this steak.
This was my first experience with Kobe beef and I don’t think that there will be another steak that can come close to it. I am not a big steak person but when I took my first bite, my eyes rolled to the back of my head. It was so tender, juicy, and delicious, I couldn’t get enough. I swear, if all steak was like this, I would eat it every day.
Snake River Farms have the best quality beef and pork products. They are the best quality and that is why they are not inexpensive. I know my mom is worth every penny and I will definitely be sending her one of the Mother’s Day packages. (I will also be ordering a couple of steaks for my husband for Father’s Day. He is a big steak man and he enjoyed these filets so much, he nearly fell out of his chair.)
When I will be ordering steaks to send to my mom directly, I know that they will arrive quickly and safley. These steaks were packaged perfectly for shipping. My steaks were packed in a Styrofoam cooler, inside a shipping box. It was packed with dry ice so the steaks arrived frozen. Each product was individually wrapped in thick, vacuum-sealed packaging.

Espresso Rubbed Ribeye Filet and Loaded Sweet Potato Wedges
Ingredients
- 2 large sweet potatoes
- Salt
- 1/2 tsp paprika
- 2 Tbsp vegetable oil
- 1/2 cup blue cheese crumbles
- 6-7 crispy bacon strips crumbled
- 1/3 cup diced scallions
- 2 Tbsp Ranch dressing
Instructions
- Preheat oven to 375 and line a baking sheet with aluminum foil.
- Peel sweet potatoes and cut them into wedges.
- Toss sweet potato wedges in a large bowl with oil, salt and paprika, until evenly coated.
- Spread potato wedges on the baking sheet, evenly, in one single layer.
- Bake for 20-25 minutes, until fully done. (Time may vary depending on the thickness of potato wedges.) You can turn on the broil on for about 45-60 seconds to golden the potatoes.
- Place cooked potato wedges in an oven-safe serving dish (or just gather them close together). Spread blue cheese crumbles and bacon bits over the potatoes. Place back in the oven for a few more minutes, until cheese starts to melt.
- Spread diced scallions over potatoes and drizzle with ranch dressing.
- Serve right away.

For the steak:
1. Rub steak filets with some espresso salt and set aside while preheating the skillet.
2. Preheat a skillet over medium heat, with a little bit of oil in it, until completely hot.
3. Cook the steaks over medium heat until the desired temperature is reached.
Tips for an easy way to check the steak without a thermometer:
1. Look at your palm…now touch (don’t press) your pointer finger to your thumb(don’t flex the muscles). Feel the flesh area below the thumb with your other pointer finger. This is Medium Rare!
2. Now, touch the middle finger to the thumb(again, don’t press the fingers together, just touch). Feel the flesh area below the thumb with your other pointer finger. This is Medium!
3. Now, touch the ring finger to the thumb. Feel the flesh area below the thumb with your other pointer finger. This is Medium Well!
4. Now, touch the pinky to the thumb. Feel the flesh area below the thumb with your other pointer finger. This is Well Done!
