Oh-so-perfectly-chewy-and-gooey giant marble skillet cookie! It’s a delicious combination of vanilla and chocolate swirled into one cookie. Must make!
I can’t even describe how good this cookie is, mostly because my mouth and my hands are busy munching on this deliciousness.
I’ve been making cookies like crazy. For one, I’m a huge fan of cookies. Two, December seems to be the month when I make the most cookies. It’s either cookie exchanges or parties or just because little man and I are craving some. We think so much alike, as soon as we get home from school, “cookie?” he asks. I think it, he says it. If there are no cookies baked, I ask him which ones he would like and we make some.
I’m actually planning a cookie decorating night with my little guy this week and you will never guess what I did. I bought some sugar cookie dough. Yes, yes I did. Don’t look at me like that, I just don’t feel like making cookie dough just so we can mess around and have fun decorating. But this is more for the fun of decorating, than to actually eat the cookies. To enjoy eating cookies, I make something like this amazing Giant Vanilla Bean Marble Skillet Cookie.
Cookies make the best dessert because they are so easy to whip up. This cookie will be absolutely perfect if you like chewy cookies. The texture and flavor is so addicting here, the whole skillet will be gone before you realized what happened. You’d just be standing over it, looking at crumbs and wondering what just happened. (That is not necessarily how it happened for me, I will never confess.)
This is a great combination of soft and gooey chocolate cookie and vanilla cookie, all made with an extra flavor kick from the vanilla bean.
Vanilla Bean Marble Skillet Cookie
Ingredients
- 1/2 cup unsalted butter room temperature
- 2/3 cup brown sugar
- 1/2 cup white granulated sugar
- 1 egg room temperature
- 1 1/2 cups all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 vanilla bean
- __
- 2 Tbsp cocoa powder
- 1/4 cup chocolate chips melted
Instructions
- Preheat oven to 350 and make sure your 10-inch skillet is well seasoned. (You can also rub some oil with a paper towel so that the bottom and sides of the skillet are shiny but not drenched in oil.)
- In the bowl of an electric mixer, cream together butter and sugars or a couple of minutes.
- Add egg and beat until mixed. Scrape sides and bottom of the bowl.
- Sift in the flour, baking soda and salt. Mix the ingredients on low speed until just combined.
- Scrape vanilla bean and add seeds to the batter. Mix just until incorporated.
- Divide batter in half and set half of vanilla batter aside in the skillet.
- Add cocoa powder and melted chocolate to the leftover half of batter in the mixer and mix just until batter is evenly chocolate.
- Spread vanilla cookie batter on half of the skillet and chocolate batter on the other half. using a thin spatula, swirl cookie batter together to form marble texture. Pat it down evenly.
- Bake for 20 minutes.

Pssst!! Got a secret to tell you — I’ve cheated a few times with cookie dough. I know it’s not something I readily admit to. I’ve even bought — promise you won’t tell — bread dough! I’m hanging my head in shame but I was desperate and I didn’t have time . . . I’m sure you understand. The cookie looks phenomenal. You mean, I can say I only had one cookie 🙂 ? And eat the whole darn thing!!

Lyuba would you believe I have NEVER made a skillet cookie? I think I never have because I know if I made one I would become addicted and make one every single day and then turn into a blimp. But I think this recipe is changing all that. I must have this!!
