Breakfast tacos make a wonderful family breakfast or a holiday brunch. Fill tortillas with soft, fluffy eggs, crispy bacon, gooey cheese, and bake it for a few minutes. Salsa and avocados make the perfect topping for these tacos but there are many more options to try.
BREAKFAST TACOS
I always looks for the best brunch recipes to serve at Christmas or Easter family gatherings. It seems like more and more often we prefer to have a holiday brunch rather than dinner. Christmas is completely understandable because kids want to rip into the presents as soon as possible. To be honest, I want to rip into the presents first thing in the morning too.
I love holidays because family comes to visit, everyone is happy, and there is lots of great comforting food to eat. During holidays, it’s pretty much a rule that we have to make comforting food. Making your tummy happy matches the holiday mood.
But comforting brunch and breakfast recipes are not just for holidays. Any weekend morning will be a happy one with a big casserole dish full of breakfast tacos. Soft tortillas stuffed with creamy scrambled eggs, lots of crispy bacon, and melted cheese on the bottom and on top. That’s breakfast paradise.
These tacos are great served simply with these ingredients but I highly recommend that you try it with salsa, cilantro, and avocados on top. Salsa goes perfectly with eggs and if you haven’t discovered that yet, try it immediately.
HOW TO MAKE BREAKFAST TACOS
There are three basic steps to breakfast tacos: cook bacon in the oven, make scrambled eggs, and then, assemble and bake tacos. All can be done at the same time or, you can make bacon ahead of time to save a few minutes in the morning.
Making Bacon In The Oven:
Preheat the oven to 400° and line a rimmed baking sheet with aluminum foil, covering it entirely and up the sides. Place a wire rack into the baking sheet and lightly spray it with cooking spray. (Cooking bacon on the wire rack is essential to crispy bacon, plus it keeps the grease away from bacon.)
Lay out bacon strips on the wire rack, side by side, in one even layer. Cook bacon for 15-25 minutes, depending on thickness of bacon. (Keep the oven light on and check in on it from time to time.)
Making Scrambled Eggs:
Preheat a large cooking pan over medium heat and grease it with some oil all over the bottom and up the sides. While the pan is preheating, whisk eggs, milk, salt, pepper, and chili powder in a bowl until smooth.
Pour the eggs into the pan and let it sit for 45-60 seconds. It will start cooking on the bottom. Start slowly stirring with a spatula, evenly scraping the bottom and the sides, and folding the eggs over each other. Continue to slowly stir and fold until the eggs are just cooked. (About medium softness but not hard.)
Take the eggs out of the pan as soon as it’s done so it doesn’t continue cooking in the hot pan.
Making Breakfast Tacos:
Preheat oven to 375° and lightly grease 9×13 baking pan. Place 8 taco tortillas into the pan, side by side, folded and leaning on each other.
Spread some shredded Monterrey jack cheese over the bottom of each tortilla. Divide scrambled eggs among the tortillas evenly. Crumble bacon strips and add about 2 bacon strips her tortilla.
Sprinkle some more cheese over each taco and bake for about 10 minutes.
Serve with salsa and array of toppings.
WHAT TORTILLAS CAN I USE?
Soft corn tortillas – corn tortillas are perfect for authentic taco taste and gluten free.
Soft flour tortillas – flour tortillas taste wonderful too and they hold up much better than corn tortillas.
Hard corn tortillas – hard tortillas are great for adding a little extra crunch and you can fit more of them in the pan. These tortillas are a bit messier to eat though.
WHAT TOPPINGS TO ADD?
Salsa
Avocados
Cilantro
Diced tomatoes
Diced green onion
Sliced jalapenos
Sauteed onions and peppers
HOW TO REHEAT BREAKFAST TACOS
Reheating breakfast tacos are a little trickier but not impossible. You will need to wrap each taco in aluminum foil or the top edges of tortilla will get stale and hard to chew.
Preheat oven to 350° and wrap each tortilla in some aluminum foil. Place wrapped tacos right on the wire rack in the oven and reheat for about 10 minutes.

Yes, you can go up to the recipe card and where it says “servings 8” hold your mouse over the 8 and it will let you adjust it to however many servings you like and it will adjust the recipe for you. I hope that helps.
