Simple pull apart muffins that are made with sweet poppy seed coated dough layers and baked into individual treats. 3 ingredients, super easy to make and all too delicious!
There was this one pastry when I was little, that just stole my heart. I was completely obsessed with these pastries and every time I had a chance to run over to the bakery, that’s what I got. It was kind of an oval, soft and fluffy dough that was coated with sweet poppy seed filling and rolled. It was very different from a croissant because the dough was a very different consistency, it was much denser, almost like a soft dinner roll.
I got an idea to make a similar, childhood favorite, pastry a few weeks ago, when I found an extra jar of poppy seeds in my baking cabinet. It’s been way too long since I’ve made something with poppy seeds. I’m pretty sure that I’ve realized it a few times while shopping and that’s how I ended up with so many jars of poppy seeds.
The best part of this pastry was always the sweet poppy seed filling. I remember trying to lick out that filling first, instead of eating the whole pastry. (Kids!) While I was trying to figure out what exactly could have been in that filling, I just could not think of anything but sugar and poppy seeds because there were no other flavors, just sweet, gooey poppy seeds. So of course, I called mom. She was a sure bet to ask since she probably learned those popular pastries back in culinary school and had to make them over and over again. Of course, she knew which pastry I was talking about immediately, and what do you know?! The filling really was just poppy seeds and sugar! As the pastry bakes, sugar melts, turning the filling into sweet, gooey, poppy seed heaven.
After figuring out the filling, I wanted it so bad, I couldn’t already taste it. So there was no time messing around with any yeast based dough. I’m sure many of you feel the same way. Yeast dough takes so long, sometimes you just gotta satisfy the craving fast. So I grabbed some ready pizza dough from the bakery section of the closest grocery store and within 30 minutes I had some awesome pull apart muffins to dig into. (Pull apart muffins and breads are just so much fun, I just had to make that version of the pastry.)
Little man and hubs were both all over these muffins. And the first things my husband said when he took a bite was, “what is this awesome filling? What is in this?” He didn’t quite understand why I was laughing.
Yeap…just poppy seeds and sugar!
Easy Poppy Seed Pull Apart Muffins
Ingredients
- 1 lb ready pizza dough
- 1/4 cup poppy seeds
- 1/2 cup white granulated sugar
Instructions
- *Ready pizza dough can often be found in the bakery section of the grocery store. In comes uncooked.*
- Preheat oven to 350 and grease a 6-cup muffin pan.
- Roll out pizza dough into a rectangle that's about 18x9 inches in size.
- In a small bowl, combine poppy seeds and sugar until evenly combined.
- Spread poppy seed mixture evenly all over the dough.
- Cut the dough easily using a pizza cutter, first lengthwise, then width-wise, forming squares that are about 2 1/2 inches long.
- Carefully stack 5 squares on top of each other and place the stack on it's side into the prepared muffin pan. (It's okay if you will loose some of the topping, most of it will stay).
- Repeat with all remaining squares, stacking them in fives and placing the stack on its side in the muffin cup.
- Bake for 17-20 minutes, until golden brown.

The photo of the muffin looked so good but the finished product was underwhelming. The layers didn’t stick together so the poppy seeds didn’t become part of the muffin. They loosely stayed on top of dough so there were too many to enjoy. Using a frozen bread dough would give give the muffin more delicious flavor and texture and would more readily incorporate the poppy seeds.
