Addicting, soft, chewy cookie bars packed with caramel bits and marshmallows. To add even more awesomeness, these cookie bars are also topped with even more marshmallows and caramel bits.
Why is it that the ugliest cookies can be the tastiest?
Last week, I got an idea for some delightful cookies and I jumped up immediately to make them. The second I get the first batch out of the oven, FAIL…they looked like melted snowman. Then, I realized that I forgot to chill the dough. I pop it in the fridge for an hour, eager to make the seconds batch. Waited for 9 minutes impatiently, while cookies were baking….and … slightly less melted snowman. Ugh.
So I finished the last batch, meanwhile thinking what I could do to improve on the look f the cookies. They tasted AMAZING but they did not look amazing at all. Ugly, ugly melted cookies. It think it’s the combination of caramel AND marshmallows. Even though it’s a gooey combination, it’s such a tasty combination. I wanted to make sure to keep both in these cookies.
That night, I shared my failed but tasty cookies on my Facebook page and, after many people agreeing and sharing my disappointment, Lori (Recipe Girl) suggested that I make them into cookie bars. I was already toying with that idea and after Lori’s suggestions, I was definitely going out for more marshmallows the next day. The very next day, I made these cookie bars and they turned out FABULOUS!

Caramel Marshmallow Cookie Bars
Ingredients
- 2 1/3 cups all purpose flour
- ¼ tsp salt
- 1 tsp baking soda
- ¼ tsp baking powder
- 1 cup unsalted butter room temperature
- 1/2 cup brown sugar
- 1/3 cup white granulated sugar
- 2 eggs room temperature
- 2 tsp vanilla extract
- 11 oz bag of caramel bits
- 10 oz bag of mini marshmallows
Instructions
- Preheat the oven to 350 and grease a 9x13 baking pan.
- In the bowl of an electric mixer, cream together butter and sugars for a couple of minutes on medium-high speed.
- Add eggs, one at a time, beating after each addition. Add vanilla and beat until mixed. Scrape sides and bottom of the bowl. Mix until all incorporated.
- Turn off mixer and sift in flour, baking soda, baking powder and salt. Mix ingredients on low speed until just combined. Scrape sides and bottom of the bowl and mix a couple more times.
- Fold in 1 cup of caramel bits and 1 cup of marshmallows into the batter.
- Spread cookie batter in the baking dish, evenly.
- Bake for 20-23 minutes.
- Take out and spread remaining marshmallows and caramel bits over the top.
- Place back into the oven and turn on the broiler until the marshmallows are melted and toasted on top. Watch it carefully because marshmallows can burn very fast. It will take somewhere between 45 seconds and a minute and a half, depending on your broiler.
