Beautiful French Toast dish that would be absolutely perfect for a holiday breakfast and brunch. Tasty slices of French Toast covered with sweet, fresh cranberry compote.
I’ve had this French Toast dish on my mind since the first blow of cool breeze. This whole month, fresh cranberries have been on my shopping list, jumping from one to another over and over. I was waiting so impatiently for cranberries to get to the store. I’ve been to a total of four different stores (and a couple of them I frequent daily) with no luck of getting any cranberries. Then finally, I stopped at a store this weekend to pick up some milk and BINGO….cranberries!
The second I got home, I started on brunch. This French Toast takes no more than 30 minutes and it is finger-licking-good!! Yum, yum!
This cranberry compote topping is so good, I made another batch after brunch and saved them for little man’s waffles. Since he is a picky little thing, I mixed it right into the waffle batter. These were some of the best waffles, ever! I definitely recommend that you make some of this cranberry compote for pancakes, waffles or even on top of toast.

thanks. Our bags are all 12 oz. I just used a measuring cup for the 6 oz and I used the frozen cranberries right out of the freezer and it came out great. Unfortunately when I got to the store to buy more–they were all gone, But I have enough for 2 more batches.

Glad you were able to get your hands on some before they sold out! 🙂

this looks great. Just wondering–are you measuring or weighing the cranberries to get 6 oz?
And does this work with frozen and as well fresh cranberries?
LyubaB says
They usually come in a 6oz bag so I use that to measure them. You can use frozen but you will need to thaw them out first.

Haven’t made this yet but wanted to ask a question first. I notice that the cranberries only cook for a total of about 8 minutes. Is this long enough to soften them? They are firm little buggers!

Thank you for asking, Melissa! I’m pretty sure I meant to put 15 minutes to cook them covered. I’ll change that right now 🙂
Thank you!

I had to share it on my FB page! We have gotten in a rut and I want some good food for breakfast. I’m trying to find some different ways to consume oatmeal other than oatmeal in a bowl 🙁 Your photos are 10 drools!! Back in Indiana — miss the ocean and the warm weather. BTW — The big game is coming up — I suppose you’re for Florida.
