This refreshing and sweet wine slushie is a perfect summer cocktail. This cocktail is actually a champagne slushie and only has 3 ingredients in it. So run to the store and grab some honey mangoes, a bottle of champagne, and honey to make this delightful summer treat.
CHAMPAGNE SLUSHIE
Summer time is the perfect time to get “slushed” with some delicious frozen fresh fruit slushies. Wine slushies are the perfect summer party cocktail. It’s a frozen treat that takes minutes to make, they can be done “to order,” it’s mildly sweet, and packed with fruit and berries.
If you’ve ever been to the St. Augustine Old Town, I really hope that you got a chance to try the The Hyppo Popsicles. This homemade popsicles shop opened only a few years ago but they’ve taken the town by a storm. There are so many creative flavors always in stock and they’re all homemade.
One of our favorite outings with my little guy is to go to the old town area to play on the playground and have some Hyppo Popsicles. I absolutely love that my super picky kid chooses a different flavor of a popsicle every time.
One of my favorites though is the mango-champagne one and it’s fantastic every time. The second I bite into it, the sweet honey mango flavor washed over me and I was mentally on the beach, enjoying a juicy mango. I immediately thought that this popsicle flavor would be perfect as a wine slushie.
I did switch the popsicles with my son because noone can refuse that puppy face but I also stopped at the market on the way to home to pick up some mangoes and champagne to make slushies. That would be a treat just for mom and dad only.
HOW TO MAKE CHAMPAGNE SLUSHIES:
First, start with picking out some ripe, honey mangoes. Honey mangoes are a little sweeter and your slushie won’t need much more additional sweetener. Any mangoes can be used though.
About 4 hours before you want to make the cocktails or the night before, prepare the fruit. Peel mangoes and cut the meat off the pit. Chop mango meat into about 1/2 inch cubes and place them into a freezer, zip-lock bag. Freeze the fruit for at least 4 hours or overnight. (You may even freeze it longer.)
When you are ready to make the cocktails, place frozen mango cubes into an ice-crushing blender and slowly add champagne and honey. A good ratio of champagne and fruit that I usually go by is to add enough champagne to just cover the fruit. (Watch the foam and let it settle before adding more champagne.)
Blend everything until smooth and portion into glasses.
Enjoy the slushies right away.

Ingredients
- 8 medium honey mangoes (amount may vary depending on size of mangoes so get a couple extra just in case.)
- 750 ml brut champagne
- 1/2 cup honey
Instructions
- About 4 hours before you want to make the cocktails or the night before, prepare the fruit.
- Peel mangoes and cut the meat off the pit. Chop mango meat into about 1/2 inch cubes and place them into a freezer, zip-lock bag. Freeze the fruit for at least 4 hours or overnight. (You may even freeze it longer.)
