FRUIT SALAD

“Summertime, and the living’s easy…”

Oh wait, it’s not summer yet. It’s only April and our weather here, in Florida, is still bipolar. One day, I am singing “summertime,” and the next day, I am singing “jingle bells.”

Well, maybe it’s not quite jingle bells weather but it gets chilly at night. It’s a pain having to turn on heat at night and A/C during the day. I wish it would just stay a mild, spring weather.

Summer is when everyone likes to grill but I prefer to do it in the spring. It gets so hot in the summer, I feel like I am going to evaporate next to the grill. My parents-in-law actually got us a nice grill gazebo last year, to lower the chances of us evaporating while grilling. We like to have barbecue parties in our house, so that was a great present.

Besides tasty steaks and chicken on the grill recipes, I like to come up with side salads for outdoor parties as well. Shockingly, I don’t have many fruit salad recipes. One of my favorite fruit salads, and the one I make most of the time, is the watermelon blueberry fruit salad. Because there are SO many recipes for this fruit salad online, I never bothered posting my recipe.

In the summer, I like to make different fruit bowls for breakfast, especially if I have my favorite mango and lychee fruit, but besides the melon and watermelon-blueberry salad, I don’t make fruit salads much. The closest I come to a fruit salad is putting fruit and berries into a dinner salad, like my favorite Strawberry Balsamic Salmon Salad and a chicken salad.

This summer, I’ve set myself a goal to make more fruit and berry salads.

My first one was inspired by my husband’s love for strawberry-kiwi flavor. I thought it would make a perfect simple salad that is full of flavor but has only a few ingredients. I had no idea just how delicious it will be.

This fruit salad is bursting with a sweet, fruity flavor from ripe strawberries and kiwis and is cooled by a touch of fresh mint. This fruit salad will even make a wonderful summer dessert.

HOW CAN YOU MAKE A DESSERT WITH FRUIT SALAD:

~ Let’s start by making an amazing fresh fruit and berry salad.

~ Fruit salads are great to use as a topping on a baked treat, like cakes. An Angel Cake topped with fresh fruit salad will be a great summer dessert.

~ The best way to make a fruit salad into a summer dessert, in my opinion, is by adding a scoop of vanilla ice cream or frozen yogurt on top. Cool desserts are perfect for summer and you can’t go wrong with ice cream and fruit!

Strawberry Kiwi Fruit Salad

Ingredients

  • 16 oz strawberries
  • 6 kiwi
  • 1/4 cup minced mint leaves loose, not packed
  • 3-4 tbsp honey to taste
  • 2 tbsp lime juice

Instructions

  • Chop strawberries into small cubes and add them to a mixing bowl.
  • Peel the skin off kiwis and chop them into small cubes as well. Add kiwi to strawberries.
  • Add honey, minced mint, and lime juice. 
  • Gently mix everything together until evenly incorporated. Be gently, you don’t want to bruise or mash the fruit.
  • Serve right away or store in the refrigerator for a few hours before serving.

    I had kiwi and strawberries in the frig so this was a great recipe to find online. The only change when I make it again is to reduce the honey. It is a little sweeter than I would prefer, but I am not a huge sweet eater so others may find it perfect.
