Easy, light, and unbelievably delicious baked salmon and asparagus dish. Juicy, flaky salmon is baked with asparagus in a sun-dried tomato lemon sauce. The whole dish takes less than 30 minutes to prepare.

EASY BAKED SALMON

We woke up to the coldest temperature that I’ve seen in Florida during the day. It was 30 degrees this morning…yikes. Our poor A/C unit outside is working so hard, trying to keep us warm, that it’s completely frozen around the sides. It looks like an igloo, I can scrape it and make snow balls. (That could actually be fun!)

I never thought that I wouldn’t want to go outside the winter, in Florida. Usually, it’s the heat that we try to avoid and stay inside a nicely air-conditioned home. Winter and early spring months are our favorite and we are out all the time enjoying the mild, beautiful, no humidity air. It’s been a little too mild this week.

So we are having a little hibernation period until the temperature warms up a bit next week. The forecast is showing 60s next week already and I can’t wait to take the kiddos out. Little man has a new scooter that he was really enjoying and even wants to go fishing.

I never thought that my son would be begging to go fishing. My husband has never been fishing before and I haven’t gone fishing since I was a little girl. My grandfather used to go fishing all the time and I remember tagging along for a boat ride.

Little man saw some kids fishing at the playground by the river and ever since then, he’s been asking to go. He’s been fascinated by it so grandma got him a set of fishing poles for Christmas. We didn’t’ expect this cold weather to hit so he’s been very impatiently waiting to go fishing when it warms up.

I wish we lived near the lakes and river where there is salmon. I would definitely go fishing for salmon every day. Wouldn’t it be great to eat fresh salmon every day? It would be heavenly for me because it’s my favorite fish to eat.

We’ve been talking about fishing so much lately, I had a craving for salmon for two weeks. A few days ago, I ran out and got myself some beautiful fresh salmon and made this delicious lemon and sun-dried tomato baked salmon. This dish is super easy and very flavorful. I ate both salmon pieces in one sitting, it was too good.

Ingredients

  • 1 lb salmon fillets skin on
  • 10 oz asparagus
  • Zest from 1 lemon
  • Juice from 1/2 lemon
  • 2 Tbsp olive oil
  • 3 Tbsp dry white wine
  • 3 oz diced sun-dried tomatoes in olive oil just tomatoes
  • 1 tsp dry crushed basil
  • 4 large garlic cloves
  • Salt
  • Fresh cracked black pepper

Instructions

  • Preheat the oven to 425 and line a rimmed baking sheet with parchment paper. I like to create a border with parchment paper edges so the sauce and juices stay inside.
  • Rub salmon skin with some oil and place salmon fillets on the parchment paper, skin down.
  • Season salmon with a little salt and pepper.
  • Cut the white edges of the asparagus off and cut the stalks in half, to create shorter pieces.
  • Add asparagus to the baking sheet, around salmon. Try to place asparagus in one layer so it bakes evenly.
  • In a small bowl, combine lemon zest, lemon juice, olive oil, wine, sun-dried tomatoes, pressed garlic, dry basil, salt, and pepper. Whisk well and spoon the sauce mixture over salmon and asparagus.
  • Bake for 18-20 minutes, depending on the thickness of salmon fillets.

    I loved the recipe, and cooked it for 18minutes, the sun dried tomatoes got over cooked and charred, next time I’ll use 400 rather than 450.I sauted chopped onions and garlic and then added the rest of the sauce.

    1. I’m glad to hear you enjoyed the recipe! For next time, just a quick note: the recipe says to set the oven to 425°F. Your addition of sautéed onions and garlic to the sauce sounds fantastic and must have added a wonderful depth of flavor. Happy cooking!

  5. I love this dish so much. I’d like to make it again but with more of the sauce to put on white rice. How do I make more of the sauce that doesn’t get vaporized in the oven?

  6. Hi. I wanted to try this recipe as it sounded so good. I just have one question though. Can I use frozen salmon fillet? Bought some from the store today.

    1. You can always use frozen just make sure it is completely thawed and use a paper towel to get the extra moisture out of it.
