Irish Beer Burger
This Friday, celebrate with a nice, juicy, Irish Beer Burger!
You don’t actually have to wait until St. Patrick’s day but what a fun way it would be to celebrate a Friday AND St. Patrick’s Day. What could be better for lunch on a Friday than a beer burger with Guinness caramelized onions, gooey cheese, and crispy bacon? May be a pint of beer next to it and some Bailey’s Cream Puffs for dessert.
For these beer cheeseburgers, I used Guinness Blonde beer. Guinness Blonde is a lager, not a stout, and it it has a milder flavor to it. This was my personal choice because I didn’t want to overwhelm the flavors of bacon, onions, and beef with a strong stout. You can definitely use Guinness stout here is you want a bolder beer flavor.
I also paired this cheeseburger with an Aged Swiss cheese for a sharper flavor. If Aged Swiss is not available, feel free to use regular Swiss cheese.
Tips and Tricks For The Best Burgers:
If you want to take a few extra steps, to make the best burgers possible, you can follow these tips and tricks:
Season, season, season, inside and out! Season ground beef when mixing it and after your shape the patties. Season each patty on both sides with some more salt and pepper.
Refrigerate before cooking! The most important tip that most cooks emphasize is to cook cold burger patties. You don’t want to let the fat in the meat mixture melt before the burgers are cooking to have the juiciest texture. So it’s best to handle the meat as little as possible, shape the patties as quickly as possible, and refrigerate shaped patties for 2-4 hours before cooking.
Preheat the cooking surface first! Whether you’re cooking on stove-top or the grill, make sure to thoroughly preheat the cooking surface.
Make a little well in the patty. Use your fingers to make a well in each center, about half way deep. This truly does help to keep the centers from raising and bulging.
Do not disturb! Do not touch the patties after you place them on the cooking surface until ready to flip. Fight the urge to readjust or move them around.
Do not press! Ever! Please, please, do not press the burgers. It breaks my heart to see people squeezing all those wonderful meat juices out.
Let it rest! Take cooked burgers off the grill and let them rest for a few minutes before eating. This will give a chance for all the juices that have compressed during the cooking process to spread out and give you a nice juicy bite every time.

Irish Beer Burger
Ingredients
- Vegetable oil for cooking
- 1 lb ground beef
- Salt
- Fresh cracked black pepper
- 1/4 cup Guinness Blonde beer
- 1 large yellow onion
- Salt
- 1 tsp white granulated sugar
- 1/4 cup Guinness Blonde beer
- 6-9 crispy bacon slices
- 2-4 slices Aged Swiss cheese
- 3 potato burger buns
Instructions
- Note: 1 lb of ground beef can either make 2 big burger patties or 3 smaller. You can also divide the ground beef into 6 sliders. Size of patties will affect cook time. Onions will take the most time to cook so start them first.
- Preheat a cooking pan over medium heat and lower the heat a little bit.
- Slice onion thinly. Add some vegetable oil to the preheated pan and add sliced onions. Season with salt and add sugar. Mix well and let onions slowly cook, stirring occasionally, until golden color is reached. Add 1/4 cup of beer, stir, and let onions cook until liquid is pretty much cooked out. Take off heat.
- Preheat a cooking pan over medium heat and add some vegetable oil. Form patties out of ground beef, working them as quickly and you can. Salt and pepper each side and add them to the heated pan. Cook on each side until burgers almost reach your desired temperature. Add about 3 tablespoons of beer to the pan and let burgers finish cooking on each side.
- Build burgers by adding bacon, burger patty, caramelized onions, and cheese between potato roll halves.
