Even if I didn’t believe that it was summer from the fact that kiddo is out of school and that it’s June, the weather would sure convince me. It is hotter than hell this week. I knew that beautiful spring weather wouldn’t last, but I was so hopeful. This week, it’s been blazing!

Of course, what do we do yesterday? We decide to go to the zoo. “Smart move!” After an hour, I was soaked to the bone and little man was begging to go back to the car and go home, where there is air conditioning and a pool. We only lasted another hour and you know what, I think the animals were feeling the same way we were. Half of them were a no show and the rest were just laying in the shade all stretched out.

It was just the monkeys, jumping in the trees and laughing at all of up poor saps who decided to go to the zoo in a 100-degree weather. Yes, I’m quite convinced that’s what they were doing, laughing their butts off. The sounds they were making sounded just like a human rolling laughter.

After a couple of hours, an unsuccessful giraffe feeding (I’m sure he felt it was too hot to eat), being laughed at by monkeys, and too hot to care, we waddled to the car and went home. As soon as we got home, all I could think of was coffee. We got up very early to try to get to the zoo while it was still cooler in the morning (a lot of good that did) and between that and the sun, I needed an early afternoon pick-me-up.

Ingredients

  • 2 cups crushed ice
  • 1 1/2 cups cold hot chocolate
  • 2 Tbsp caramel
  • 3 tsp instant espresso coffee powder
  • Optional Toppings:
  • Whipped cream
  • Chocolate syrup
  • Caramel syrup
  • Crushed pecans optional and be careful sipping

Instructions

  • Combine crushed ice, Nutchello, caramel, and instant espresso in a blender.
  • Pulse until everything is completely blended.
  • Divide between two glasses.
  • Top off with some whipped cream, caramel, and chocolate.
  • (If using nuts, be careful sipping when mixed.)
