Let me just start by saying, I think it is so sweet when my man cooks for me. It’s a sweet thought and a nice break from the kitchen.

While it’s very nice (and tasty), what comes after is not as nice. No, not eating—that’s always good. It’s the cleaning! I remember the very first time that hubs cooked for me. He wasn’t my husband yet and it was not long after we moved in together. I came home from work, he was in the kitchen and it smelled very good. He told me to just sit at the dining room table because dinner was almost ready. It was such a sweet surprise! Dinner was good and after we were done, we picked up our plates and brought them to the kitchen. That is where my jaw dropped…

My first thought was, “a hurricane must have come through my kitchen!” The horror of that mess still haunts me. I tell that story to my friends all the time and they share my pain because their guys are the same—they tend to turn the kitchen upside down while cooking. Ha, I guess that special treatment comes with a price. Good thing I don’t actually have to clean that mess.

He’s gotten so much better about not making a big mess while cooking. Even though it doesn’t look like a hurricane hit my kitchen, there was still a thunderstorm. But that’s okay because he’s also gotten good at cleaning it. Like the last time he made us my Onion Ring BBQ Cheeseburgers. That’s one messy burger to make but the clean up was a breeze.

I found that if it’s pretty much all clean by the time dinner is cooked, you’ll thank yourself after you’re done eating dinner.  When you’re full and happy, last thing you want to do is clean the kitchen.

I absolutely love this burger!

There are a couple of things that makes this cheeseburger extra special. For one, I use mustard-based barbecue sauce. It just a little touch but it makes the flavor palate unique and really tasty. Second, I use homemade onion rings or petals on top of the burger. I like making onion petals (wedges) just because they are cute and fun. They taste the same whether made in rings or petals, so it’s up to you. I make these onion rings with buttermilk-based batter but you can also use my Beer Battered Onion Rings (click for recipe).

Ingredients

  • Burger:
  • 1/2 lb ground beef
  • 1/2 lb ground pork
  • ¼ cup finely diced medium yellow onion
  • 2 garlic cloves grated or pressed
  • 2 tsp Worcestershire sauce
  • 2 Tbsp minced parsley
  • Salt fresh cracked pepper
  • Onion Rings or wedges:
  • 1 cup of flour
  • 1 1/4 cups of buttermilk
  • 1 Tbsp Worcestershire sauce
  • Salt
  • Black pepper
  • 1/4 tsp paprika
  • 1 garlic clove pressed
  • 1 large Vidalia onion
  • 3-4 cups of oil vegetable or canola for frying
  • Toppings:
  • 2 buns
  • Mustard-based bbq sauce recommended
  • Pickles
  • Sharp cheddar cheese

Instructions

  • Onion rings: In a medium mixing bowl, whisk flour and buttermilk together until smooth. Whisk in Worcestershire sauce, garlic, paprika, salt and pepper. Taste the batter to make sure you have enough salt.
  • Slice onion into thick rings or wedges. Pat them dry with a paper towel, to soak up the onion juice.
  • Preheat oil in a sauce pot (or in a fryer) on medium-high heat. (Do not use a shallow pot so that you minimize the splatter.)
  • Dip each onion ring into batter and slowly add them to the hot oil. Repeat with as many onion rings as your pot will hold. Fry them until they are golden brown. (This may take 7-10 minutes but watch them. Don't be tempted to raise the heat to high or you will end up with raw onion in crispy batter.)
  • Lay cooked onion rings onto a paper towel to soak up excess oil.
  • Burgers: Combine ingredients for the burger in a medium mixing bowl and mix very well, until all ingredients are incorporated throughout.
  • Preheat skillet over medium heat and add a little bit of vegetable oil. Form two burger patties and cook on both sides util burgers reach desired temperature.
  • Build your burgers with bbq sauce, sliced pickles, cheese and onion rings on top.
