STRAWBERRY SALSA

Oh my gosh, the heat! We can’t catch a break from the heat, even grass is starting to looks sad. Summer is heat, lots of heat but a little rain would be nice at this moment. 

Summer also means cookouts, barbecues and lots of grilling. Father’s Day is coming up soon and so as Fourth of July. Grills will be busy over the next few weeks and ovens will be less busy at that time. I don’t know about you but I am not big on turning on my oven when it’s high 90s outside.

So I want to come up with some desserts for the picnics that do not involve me baking. Berries are wonderful this time of year since they’re sweet, fresh, juicy, and flavorful. Strawberry salsa seemed like a great way to go.

This is a very simple salsa recipe with few ingredients but it’s are all just the right ones. Every one of these ingredients adds a special flavor to the dish and makes each bite explode with fresh flavor in your mouth. This is definitely a make-your-eyes-roll-to-the-back-of-your-head dish!

HOW TO MAKE STRAWBERRY SALSA

Wash strawberries, cut the stems off, and cup strawberries into small chunks. 

Zest the lime and add zest to the bowl. Roll that lime on the counter with your hand, pressing it lightly. This will burst some of the membrane and help lime release more juice. Cut in half and squeeze the lime juice into the bowl (take out the seeds).

Add sugar, basil, and almonds to the bowl and mix well. Refrigerate until in an air-tight container until ready to use.

CAN STRAWBERRY SALSA BE MADE AHEAD

This strawberry salsa can be made a few hour ahead of time but not too much loner. Strawberries will start to soften after a few hours so it’s best served fresh. 

Store this salsa in the refrigerator, in an air-tight container.

HOW TO SERVE STRAWBERRY SALSA

This strawberry salsa is beautiful on top of ice cream or other cold desserts. 

Serve it with salty or sweet chips. Make some cinnamon tortilla chips in the oven to use for scooping. 

Top Strawberry Cheesecake Tacos with this salsa for an additional burst of flavor. 

If you want to feel adventurous, top off salmon or chicken with this salsa for a beautiful summer meal.

Ingredients

  • 1 lb fresh strawberries
  • 1/2 cup chopped almonds
  • 1 1/2 tsp brown sugar
  • 1 lime - juice only
  • 1/2 lime - zest
  • 1 tbsp minced fresh basil

Instructions

  • Chopped strawberries into small cubes and add them to a mixing bowl.
  • Zest half a lime and add zest to the bowl. Roll that lime on the counter with your hand, pressing it lightly. Cut in half and squeeze the lime juice into the bowl (take out the seeds).
  • Add sugar, basil, and almonds.
  • Mix well and refrigerate until ready to use.
  • It's preferable that you make this salsa fresh and serve it the same day that you made it.

    Looks so fresh and inviting — “take a sample – you’ll love it.” I can attest that Wal-Mart does have some good strawberries. When we were in your neck of the woods they had them on sale and they were sooooo good. The minute you opened the container you could really smell that wonderful strawberry smell.
