Cheddar Ale Dip

Cheeeese! Anything cheesy is always fabulous, especially when you can dip chicken fries in it. Today, I will introduce you to Cheddar Ale Dip!

My boys love it when I made chicken fries and I do like making it for them. Unfortunately, in the  last month, I haven’ had much time to spend in the kitchen. Finals is a tough time around here. I’ve been spending hours and hours at the library and very little time to spend in the kitchen. I’ve been making my quick and easy meals for the boys. As long as everything is delicious, they are happy. As long as I can make it somewhat nutritious, I am happy!

I’ve already shared my love for Tyson chicken a couple of times. I like the flavors, I like the texture and especially, I like the quality. I trust them and it’s not easy to get. So if the little man is begging for some chicken fries, I’m not home, hubby can quickly make him some Tyson homestyle chicken fries.  Of course, the big one likes it as much as the little one and makes some extra for himself.

Unknowingly, hubby gave me an idea for this dip back in March. Every year, around St. Paddy’s day, I make Cheddar Ale soup. Every year, hubby tells me that it would be great as a dip. I don’t know what took me so long, but I made him some Cheddar Ale Dip. Finally! It was amazing…cheesy and creamy!

 While shopping at Sams, we came across a product demonstration on chicken fries. That was a fun little snack for the little guy while shopping. Of course, I have to pick up some more for him while getting a few things for the dip. I also have a little secret…I snuck in some carrots! Shhhh…

Cheddar Ale Dip

Ingredients

  • 2 tbs butter
  • 1 shallot
  • 1/2 carrot
  • 3/4 cup Killian's
  • 4 oz sharp cheddar
  • 4 oz sharp white cheddar
  • 3 oz cream cheese
  • salt

Instructions

  1. Melt the butter in a small sauce pot.
  2. Add chopped onion and shredded carrot. Saute for a couple of minutes and add the ale. Simmer, on medium for about 10-13 minutes. The ale will cook down somewhat.
  3. Grate in the cheeses. Add the cream cheese and salt. Using a rubber whisk, cook, stirring, until all cheese is melted.
  4. Run it through the food processor or blender to make it smooth.
  5. If you want: Transfer it to a ramekin, add some cheese on top and set it under a broiler until the cheese is golden.

    • Thank you Dorothy :) I actually can! Our school library doesn’t care if we bring food and drinks, most of us camp there for hours and hours. (Psss, Starbucks is attached to the library :) )

    • The alcohol cooks out completely, Ethel. But if you don’t like to use alcohol in cooking, get non-alcoholic beer.
