Good morning! I know I said that I would share this recipe with you of Friday but unfortunately, I couldn’t get to it. I’m sowwwy! I have so much more school work this semester than last, I just haven’t quite figured out how much time I need to complete it. Also, the little man just does not like me spending a lot of time on the computer.
Something happened yesterday morning while I was making these quiche hearts that I HAVE to share with you first! I got a call from the school placement office and they told me that my little guy’s first day of school is on Tuesday!! I can’t believe that he will be going to school already. I’m so nervous but it’s a voluntary pre-K so he will be starting with half days. He never used to go to day care before so this is a big change for him … and me.
How did you handle your kiddo’s first day in school??
As promised, here is a nice idea for Valentine’s Day breakfast!
Tomato Feta Quiche Hearts
Ingredients:
Makes 4 hearts
3 large eggs
1 tbs sour cream
1 tbs milk
1 small Roma tomato
Salt
2 tbs Feta cheese
Directions:
1. Preheat the oven to 350 and lay out silicone heart baking cups on a baking sheet (or soft heart muffin pan).
2. Divide the Feta cheese between four heart cups.
3. Grate the Roma tomato on a fine cheese grated, to get the puree. Combine all other ingredients with tomato puree in a mixing bowl and whisk well. Divide the egg mixture between the heart cups.
4. Bake for 15-17 minutes.
Enjoy!!
