“Breakfast is the most important meal of the day.” I’m sure that every one of you heard this saying before and I’m sure that many of you don’t eat breakfast. I was one of those people whose breakfast involved a giant cup of coffee and a growling tummy. Good thing the guys are always good and have breakfast. Lately, I’ve been doing better too, trying to eat a healthy breakfast every morning. I do notice an improvement in energy levels.
The reason why breakfast is so important, is because it gives you the energy to start your day and perform your best. It is even more important for kids to eat breakfast because their brain and body is still developing and needs regular intake for food. Starting the day with a wholesome breakfast will help kids start their day and perform better in school, not only intellectually but also behaviorally.
I’ve always though that my little man’s favorite meal was breakfast. He is becoming a pickier eater but he still would eat a wide variety of breakfast foods. His favorite breakfast foods are yogurt and sausage. He used to love eggs but all of a sudden just stopped eating it one day. So there went that source of protein. I’m glad that he is still gaga over breakfast sausage.
A couple of months ago, I discovered Jennie-O turkey breakfast sausage. I starter getting it for the little man regularly and he loves it. My husband actually told me that this turkey sausage tastes much better. Aside from the taste, I like that it’s made with lean meat. As for me, I am not a huge fan of breakfast sausage, I do love turkey bacon though.

For this simple service project, Champions for kids teamed up with Jennie-O turkey meats to encourage eating and serving nutritious breakfast to kids.
The one morning that my hubby was home this week, I made up a nice breakfast to have as a family. Unfortunately, due to work and school schedules, we are rarely able to eat together as a family. I take advantage of that when I can. We also got a nice story during breakfast!
Spinach & Cheese Egg Cups Wrapped in Turkey Bacon
Ingredients:
(makes 3 cups)
4-5 slices of Jennie-O turkey bacon
4 large eggs
2 tbs milk
3 tbs cooked spinach (about 3 oz uncooked)
salt, pepper
About 2 tbs of Monterrey Jack cheese
Directions:
1. Preheat the oven to 350 and lightly grease a large muffin pan
2. Line the bottom the the muffin pan cups with turkey bacon.
3. Divide cooked spinach among the cups.
4. In a small bowl, whisk eggs, milk, salt and pepper. Divide the egg mixture among the cups.
5. Top off with cheese and bake for 17-20 minutes.

These look really tasty. I saw a similar recipe using regular bacon, but I can’t do non-crispy bacon. Turkey bacon on the other hand would be just fine, and I happen to love it!
Do these reheat well?
I am going to pin this and try it. They would be nice to have in the fridge in the morning ready to just pop in the microwave for a few seconds and be ready to go! Beats a sugary granola bar grabbed on the way out the door! Visiting from Shine On Friday.
