Sorry to be quiet for a few days. The holidays are over and school is about to begin, so I took a couple of days to relax before the craziness starts. Have you or your kids gotten back to school yet? I go back next week. This break was just too short.
Are you ready for back to school from the holiday break? I am, kind of. I went and got my books the other day and let me tell you…
I am in grad school full time which means that I am taking 3 courses a semester. Well, while I was getting my books, I was “pleasantly” surprised to find out that I had to get five textbooks for my three courses. Yippee…double the reading from my last semester. Uhhhh…good thing I got all those Starbucks gift cards for Christmas.
I also had a little help during my last semester. I made myself a great energy snack mix. I used to take it to the library with me. It’s a nice healthy, filling snack that gives you energy and power to keep studying. This mix is also loaded with antioxidants, vitamins and protein to stay full.
Equal parts of:
Cashew/peanut/macadamia or other nut mix (non salted or lightly salted)
~Mix equal parts of all the ingredients in a bowl. Separate in desired portions and pack with you to school or add it to the lunchbox for the kids.
