Pound Cake:
5 medium eggs, room temperature
4 1/2 tbs of whole milk, room temperature
2 tsp vanilla extract
2 1/4 cups of cake flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/4 cup of sugar
19 tbs of butter
2 1/2 tbs cocoa powder
White Chocolate Sauce:
3 tbs butter
3/4 cup heavy cream
1 cup of white chocolate chips
Pound Cake:
Preheat the oven to 350. Grease a heart bunt cake pan (or other shape)
1. In a medium bowl, whisk together eggs, milk and vanilla. Set aside.
2. In a bowl of an electric mixer (or in a separate bowl using hand mixer)…sift the flour.
3. Add the sugar, salt and baking powder. Mix the dry ingredients on low for about 30 seconds (until well combined).
4. Add the butter and half of the egg mixture. Mix on low until just combined. Scrape the sides and bottom. Change the speed to medium and beat for about a minute. The batter will start get light and airy.
5. Add the other half of the egg mixture in two batches, beating for about 30 seconds after each addition. The cake batter will be light and fluffy at that point.
6. Take out half the batter and set aside. Add the cocoa powder to the mixing bowl with the remaining batter and mix just until all combined.
7. Pour the two types of batter simultaneously into the pan, from the opposite sides. Even out the top.
8. Bake for about 25-27 minutes or until the toothpick inserted in the center comes out clean. (remember to adjust the time for the size of the pan that you are using and do a toothpick test often)
White Chocolate Sauce:
1. Melt the butter in a small sauce pan and add the heavy cream and chocolate chips. Cook the sauce on medium-low heat, whisking constantly (using the silicone whisk) until all combined. (You may have to strain the sauce if some of the chips didn’t melt all the way)
2. Pour the white chocolate sauce over the pound cake and serve some on the side.
