2 tbs olive oil
2 lbs of tomatoes (4 cups chopped tomatoes)
1 medium yellow onion
1 medium carrot
3 garlic cloves
1 tbs of minced fresh basil
1 tbs of minced fresh parsley
1/2 tsp crushed red pepper flakes
salt
Directions:
1. In a medium pot, heat up oil and add the chopped vegetables, herbs and spices. Bring to boil, stirring frequently, and lower the heat to medium-low.
2. Cover the pot but leave a crack for the steam to escape. Cook, stirring occasionally, for 35-45 minutes.
3. Transfer the content of the pot into the blender or a food processor. (Make sure to open the tab in the lid for the steam to escape, you don’t want to have the hot sauce in your face if the lid pops). Blend until smooth.
