Andy’s Mint Chocolate Cheesecake, Happy Birthday To My Sister

Everyone always tell you to cherish every second with your kids because they grow up too fast. Somehow, you never actually grasp that advise until you actually look at a child one day and they are all grown up. Every time I look at my baby sister, I can’t help but wonder how in the world is she so big already? I just want to pick her up and spin her like I did…yesterday? No, not yesterday, years ago! Although, it feels like yesterday.
I remember when that little red thing was born. I was just changing her diapers and walking her in her little stroller. Now, we talk about boys, dance and what she wants to study in college. Time does fly! I’m afraid of the day when I wake up and my son will be that grown up.

This past Monday, she turned 12! I think she is most excited to be able to ride in the front seat.
She stayed with me the weekend after Thanksgiving. I had to bake her her birthday treat early, while she was here. We decided on chocolate cheesecake, she loves her chocolate. I couldn’t believe that she never tried Andy’s mints before, so I just had to make her an Andy’s Mint Chocolate Cheesecake. It was a hit with everyone in the family and especially with the birthday girl. She referred to it as heaven! It’s the Best compliment I can get!

Ingredients:
(Based on Kraft recipe from here)
Chocolate graham cracker pie crust
2 tbs butter, room temperature
2 tbs plain yogurt
2-8 oz packages of cream cheese, room temperature
1/2 cup of sugar
1 tbs flour
1 tsp vanilla extract
4 oz of semi-sweet Baker’s chocolate, melted
2 eggs, room temperature

2 tbs hot fudge topping, for topping
1 cup of crushed Andy’s mints for topping

Directions:

1. Preheat the oven to 325.
2. Beat cream cheese, eggs, butter, yogurt, sugar, flour and vanilla until blended.
3. Add melted chocolate slowly and mix well.
4. Pour into the pie crust
5. Bake for 40 minutes.
6. Cool the cheesecake to room temperature. Spread the hot fudge topping over the cheesecake.
7. Evenly, spread the crushed Andy’s Mints.
