Spinach Parmesan Dip

First, I want to apologize for taking so long to share this recipe. I know that I promised to share it about a week and a half ago, when I shared our Avengers party. I’ve been so busy with school, I barely had time to post anything. Right now, I am taking a break from writing two papers to write this post.
You would think that I’d be tired of all the writing. Truth be told, I am tired of all the reading and writing. I want to whine for a minute, if you don’t mind?! “Grad school is HARD! Whaaa whaaa!” OK, I feel better!
As I mentioned, this dip was a part of our Avengers party. It was representing The Hulk! See, I even found purple chips a.k.a. blue corn tortilla chips. The dip is very easy to make and it’s DELISH!


Ingredients:
9 oz cooked spinach
8 oz cream cheese, room temperature
1/2 cup sour cream
1/3 cup mayo
6-7 oz of Pecorino Romano or Parmigiano Reggiano, freshly grated
3 garlic cloves
salt, fresh cracked pepper

Directions:
1. Preheat the oven to 350

2. Combine all the ingredients in a bowl and mix very well.

3. Transfer into a baking dish, cover with foil and bake for about 15 minutes

4. Take off the foil, sprinkle with a little grated Parmesan over the top and bake, uncovered, for 10 more minutes.
