…And the pumpkin feast continues!! I love pumpkins and cooking with pumpkins. I also have a lot of them from farmer’s market trips and pumpkin patches. So I must keep cooking with pumpkins and coming up with fun ways to use pumpkin puree.
I feel like my boys are getting a little tired of pumpkin pancakes so I made this french toast for them. At first, I made it with wheat bread, like I usually do, and it came out so good that I knew I had to share it. Although, I wanted to try it with French bread. I ran out the next day and got some bread and…Perfection!!
Ingredients:
2 eggs
2 tbs whole milk
1/2 tsp vanilla extract
2 tbs pumpkin puree
1 tsp sugar
1/4 tsp cinnamon
pinch of nutmeg and allspice
8 slices of French bread, sliced at an angle
2 tbs oil
Directions:
1. Preheat the oil in the medium pan.
2. Combine all the ingredients (except bread and oil) in a bowl and whisk well.
3. Slice the bread on an angle and batter the bread in egg mixture.
4. Cook the french toast for about 3-4 minutes of each side, on medium heat.
Enjoy!!
