I thought I’d share a fun little breakfast we had yesterday. Actually it was more of a brunch but breakfast is great any time of the day!
I was trying out some Halloween ideas and came up with this breakfast. It is very easy to make and so much for kids…and for adults.
To make the pumpkin pancakes, you can use my recipe here.
I used my cookie cutters to make the pancakes.
Lightly oil the cookie cutter. Just hold down the cookie cutter in the pan and spoon the batter into it about a quarter full. Be careful flipping, flip both the cookies cutter and the pancake at the same time.
I also used a cookie cutter for the ghost eggs.
I only used egg whites to make the ghosts with a little bit of salt and no pepper. I had a little trouble with the eggs, so remember to oil the cookie cutter after each egg. Also, remember to hold down your cookie cutter for a few seconds so it doesn’t all leak out.
Since I had egg yolks leftover from the ghost eggs, I thought they would make great eyes. No breakfast is complete without toast., so here is my grumpy toast.

I really love these. Very inventive using the cookie cutter. Looking at it, it almost looked like French Toast. Love it. If you’d like my sister and I would love to have you come and hook up to our PUMPKIN PARTY.
