Must Have Been Something I Ate: Mediterranean Quinoa Salad

I got a chance to review a wonderful new healthy living book written by Peggy Kotsopoulos. Peggy is a Registered Holistic Nutritionist, Health Educator, and Culinary Consultant focused on teaching real health through lifestyle and dietary choices that are easy and delicious. 
I am loving Peggy’s book because it is not just full of delicious and healthy recipes, it’s full of information about making your life healthier. She teaches you how to make a connection between food and mood, food and weight control, food and beauty and food and health. Peggy educates on what types of food can effect your mood, aging, sex, energy, etc. She also shares beauty recipes, which I love and already tried the mask. Awesome!

This book is very educational and a very easy read! The recipes are very easy and sound delicious. I already “dog-eared” some smoothie and soup recipes to try. Today, I am sharing the Mediterranean Quinoa Salad from Peggy’s book.
I love Mediterranean flavors and I had some quinoa that I’ve been dying to use, so my recipe choice was very easy. The best part is, my little man loved this dish as well. He likes my Mediterranean couscous salad, so I knew that he would like this salad too. I am a proud mama that my little guy eats veggies with no coercion.

Ingredients:
2 cups of white quinoa
1 cup of grape tomatoes, chopped
1/2 cup of chopped cucumer
1/2 cup sliced black olives
1/2 cup chopped red bell pepper
1/4 cup of feta cheese
2 tbs of extra virgin olive oil
1/2 tsp sea salt
fresh ground black pepper
1 tsp of oregano
1 tbs lemon juice

Directions:

Add all ingredients to the bowl and mix well!
