Strawberry Daiquiri Rose Cake

I have been dieing to make a rose cake. Originally, I saw a rose cake on I’m A Baker. Love her, by the way! This tutorial for a rose cake has been pinned for weeks and I was happy that I finally got a chance to make it. 

My friend is having a baby and we were having a baby shower for her at work. I was in charge of the cake and I wanted to give it my best! I gotta say, I really brought it!! 

She wanted a similar cake to the one I made for my mom. Remember, the Blackberry Daiquiri Cake? Since she loves strawberries, I made a few changes to my cake and came up with Strawberry Daiquiri Cake. All the changes were really beneficial and I got nothing but praises for this cake. She said that it was the best cake I ever made for her. 

Please use THIS recipe and I made only two changes to the cake:

First, I used fresh strawberries and homemade strawberry jam for the filling. I spread a thin layer of jam on both sides of the cake layers and spread out sliced strawberries in between. 

Second, I changed the frosting since she is pregnant. Instead of rum, I used 4 tbs of coconut creme. I also made one and a half of the amount of frosting recipe, since the roses need extra frosting. To stabilize the frosting for the roses, I added 4 tbs of meringue powder. It was perfect!

I am so happy that the roses turned out well, I was very nervous. I would definitely plan out the placement of roses better next time since I had some small free space left.
Another thank you to I’m A Baker for the coloring of the cake tip. I used blue food coloring spray since she is having a baby boy. Actually, she is having him any day now!!
