Lucky Pot O’Pasta Salad

I found this super fun, clover shaped pasta at the store last month. I couldn’t wait to make it as one of my St. Patty’s Day features. This pasta salad is full of veggies and so fun, it would make a great lunch. 
I also got a chance to try my new grape seed oil. For a few months now, I’ve been eying grape seed oil but been too chicken to try it. I heard about it from a few people but for one reason or another, I’ve passed on it. Well, I finally ordered some from my friend, who is a representative for  Wildtree Herbs. I gotta say, I’ve been using it in cooking and it was great. 
This was the first time that I used the oil without cooking it. I just love the smooth and light flavor. It is perfect for this (or any other) Lucky pasta salad.

Ingredients:
2 cups of cooked wheat pasta
1 bunch of chopped broccoli florets
1 medium green bell pepper
1/2 medium cucumber
1 tbs minced fresh parsley
2 basil leaves, minced
2 tbs garlic grape seed oil
2 tsp lemon juice
1 tsp Balsamic vinegar
salt

Directions:
1. Cook pasta according to the package
2. Combine all ingredients in a large mixing bowl. Mix very well.

3. Cover and refrigerate for at least an hour.

Enjoy!
