My best friend and I went out for a girl’s night last week and we went to a new place in St. Augustine. This is the first time we went there and we had a pretty good time. The sangria was “so-so” but the tapas was really good! I got a dip trio plate and one of those dips was a white bean dip. I have never tried it before, actually I am not a big fan of beans so I usually stay away from it. This year I’ve been trying new foods as part of my new year’s resolution, so I tried it! It was so good that I had to recreate it! I read a few bean dip recipes and came up with this combination.
Success!!
Ingredients:
1 15 oz can of cannellini beans
2 tbs olive oil
2 medium cloves of garlic
1/4 cup cilantro
1 tbs chopped onion
1 tsp lime juice
1/2 tsp lemon juice
1 tbs shredded Parmesan cheese
salt and chili powder
Directions:
1. Combine all ingredients in the food processor, blend well!
2. You are done! Serve with crackers, bread or chips!
