Last week, I was jonesing for some Chinese food. I’ve read a few recipes for Bourbon chicken and this is what I came up with.
Ingredients:
2lb boneless skinless chicken breasts
2 tbs peanut oil
1/4 cup of cornstarch (for dusting, optional)
Sauce
3 garlic cloves (grated)
1 teaspoon grated fresh ginger
1 teaspoon crushed red pepper flakes
1/2 cup apple juice
1/3 cup light brown sugar
4 tablespoon ketchup
2 tablespoon cider vinegar
1 cup water
2/3 cup soy sauce (more if using low sodium sauce)
Directions:
1. Cut chicken breasts into 1/2 inch sized pieces, and if you choose lightly dust with cornstarch.
2. Heat oil in a large skillet and cook the chicken until lightly browned.
3. In a bowl combine all sauce ingredients. Pour into the center of the chicken, bring to boil and reduce heat to medium. Keep stirring the chicken.
4. Simmer for 10 minutes.
5. Serve over jasmine rice.
