Third, I really wanted to do some pastry, so Spinach Cheese Pastry was a great idea!
Puff Pastry
Spinach
Italian mix shredded cheese (one part of cheese to two parts of spinach)
Salt, Pepper
one beaten egg for brushing
~Combine the spinach, cheese, salt and pepper in a bowl. Mix well.
~Cut the pastry dough into 3×3 inch squares. Place in front of you like a diamond. Make an incision close to the top corner. Place about a tablespoon or two on mixture in the center. Fold the bottom corner over the mixture and through the incision at the top. Brush with egg, lightly.
~ Repeat with all. Bake at 350 for about 15 minutes.

Fourth, Pizza Rolls. This was gone so fast that I could not believe my eyes!
Thin refrigerated pizza crust
Pepperoni
Mozzarella cheese
Marinara sauce
Beaten egg for brushing
~Spread the pizza dough into a square on top of a large board lightly sprinkled with flour so the dough doesn’t stick. Spread the marinara sauce over it but leave about 1/2 inch of dough not covered on the edges. Spread the pepperoni evenly over the dough. Cover with cheese evenly.
~Carefully roll the dough with toppings. Brush with egg, lightly. Place on cookie sheet and bake at 350 for about 17-20 minutes.

And, of course, the Cake!!
I was so disappointed with myself for not leaving my self time to decorate the cake properly! I wanted to make the cake look like sheet music. Well, my mistake was to buy the black icing and not make it myself. It was too tick and the decorating attachment I needed to use was small. I wasn’t having the party at home so I couldn’t make last minute adjustments. The cake still tasted great, but I’m glad this happened when the little man is young and doesn’t cake how he cake looks!
Yellow cake with chocolate mousse filling and whipped cream frosting!
Yellow cake recipe you can find here…since I’ve made it more then once
Chocolate Mousse I will post separately, this is one of our favorite desserts!
